Roasted Vegetables

I absolutely LOVE this recipe. The first time I followed the instructions exactly and it turned out delicious. I have later amended it so I'm not putting in so many carbs. I've added cauliflower, tomatoes and usually leave one kind of starch (potato) and leave in the onions and peppers. MmmMmm good!

Roasted Garlic Cauliflower

So delicious. So easy. So quick. What a great way to make vegetables interesting. You could probably serve on the side with steak, salmon or chicken. Versatile!

Baked Honey Nut Chicken

This was delicious. I used chicken tenders instead, and it ended up tasting like a very healthy version of chicken fingers (I omitted the butter). Towards the last 5 minutes of baking, I added some brie cheese for a creamy texture on the side. So good!

Bacon Wrapped Dates Stuffed with Blue Cheese

I made these as a Thanksgiving appetizer, they were gone within minutes! The textures blend well together (cripsy/soft), and the flavors (salty/sweet) also go well. I forgot to turn them around in the oven so they came out a little burnt looking, but still tasted good. Will definitely make again. I also used goat cheese and gorgonzola. Any soft crumbled cheese will do.

Cream Cheese Pound Cake III

This cake is AMAZING. I didn't make any changes to the recipe. I made it and my 3 guy roommates finished it within hours! It has a thick, creamy texture but the firmness of pound cake. I dont like cheesecake so this was the perfect balance! Delish!

Braised Balsamic Chicken

This dish was so tasty. I took reviewer's advice by adding half the portion of balsamic vinegar and half chicken stock (to avoid the tangy taste). I also added mushrooms in the beginning with the garlic, and added some sherry cooking wine. Soooo good!

Pasta Siciliano

I LOVE this dish. I've been making it for years. The lemon and red pepper balance each other really well. If you like pasta thats not drenched in sauce, this is the recipe for you!
