Cranberry Apple Bread

This is a great quick bread recipe. I leave out the nuts, increase the cranberries a little and bake it in mini loaf pans. Great grab and go breakfast bread.

Zucchini Pie

This on is a keeper. I varied it by using a drained can of mild Rotel tomatos and chili instead of the chopped tomato. A good potluck dish.

Sweet Polish Sausage

I added a little Mr Yoshida's gourmet sauce to this recipe. Very good overall. I think I would boil the sausage for less than an hour, though.

Seven Layer Tortilla Pie

I didn't care for the fresh cilantro, but very good otherwise. I think we'll experiment with this as a meat included recipe as well as vegetarian.

I agree with the other reviewers - season the pork chops when you brown them. I used Penzey's Old World Spice combination and it added a lovely flavor to the dish. I used cream of mushroom soup instead of celery. I also put in about 2 or 3 times as much french fried onion rings as called for. Didn't hurt the flavor a bit. I used 1 inch thick chops and increased the baking time to an hour. Pretty good overall

Cottage Cheese Roast

We were pleasantly surprised with this one. The flavor was very nice, and it was quite filling. I used 2 cups of corn flakes and will probably add an extra half cup next time,as we would have like it a bit firmer. This is definitely going into the recipe rotation here. I call it "meatless loaf" instead of "cottage cheese roast"
