Traditional Beef Burritos

Very good recipe. I only had about 1/4 cup taco sauce, so I seasoned my beef with taco seasoning instead of the garlic, chili powder and cumin. Also, I topped the burritos with fresh salsa, fresh diced tomatoes and lettuce, along with shredded cheese and sour cream. These reheated nicely in the oven and remained crispy. We also added a little chipotle tobasco on the re-heated burritos. Will definately make this again!

Spicy Refrigerator Dill Pickles

Very good recipe. And oh so simple!! I used canning salt and omitted the pepper. Also cut sugar in half. Have had many requests for the recipe!

Tropical Fish Fillets

I made the sauce only, using 1 tbsp each butter and flour, then served it over blackened red snapper which my husband grilled over charcoal. The lime was overpowering, however it would be a great sauce with just 1 tbsp lime. (and we really like lime!) The flavors complement each other nicely. Will definately make again with less lime juice.

Mexican Rice III

This is a great recipe with our without changes. I made a few.....I used one whole pablano pepper instead of the bell pepper and jalapeno. I used one can of petite diced tomatoes, drained in place of the fresh tomato. I used two garlic cloves, chopped fine. As with other reviewers, I also sauteed my rice, onion and pepper for a few minutes before adding garlic and remaining ingredients, adding cilantro after rice rested. Will definately fix this for my family again. They loved it!

Unbelievable Chicken

This is the BEST chicken marinade I have ever tried!! I made this and put it on top of a garden salad. Moist, flavorful and tender. I did pound my chicken to about 1/2 inch thick before marinating, then grilled over charcoal. Thanks for sharing!

Rosemary Carrots

I couldn't get enough of these! We normally don't eat cooked carrots unless they are an ingredient in a main dish. My husband wanted carrots with dinner, so I looked and found this recipe. Very flavorful! We will definately add this to the recipe collection.

This is a great recipe. I did make a few changes to suit our tastes. I left out the sugar, used oregano instead of Italian seasoning, and used only 1/2 tsp onion powder and 1/2 tsp garlic powder. This will definately replace the canned stuff in our house! Thanks for sharing!

Beef Yakitori

This is fantastic! We liked it with beef and chicken. I also used 1/4 cup each soy sauce and teriyaki sauce, as well as 1 tbsp each lemon juice and balsamic vinegar. I marinated the meat then skewered right before grilling. I boiled down the extra marinade to remove any bacteria from the meat then added it to onion and zucchini during the last few minutes of sauteeing. Served it all over jasmine rice. Again, fantastic!

No-Knead Artisan Style Bread

Corn Dogs

Very good! I agree with other reviews about drying the dogs well before adding the batter. No cornstarch or flour needed. Also, the batter goes on better if it is cold. Make it a few hours ahead and keep in the fridge until ready to fry. I used a deepfryer and fried two at a time. We will definately make this recipe again!

Marinated Chuck Roast

Very good recipe. I also increased my marinade to 8 servings and used a 3 pound bone-in roast. I cut the roast into smaller serving size chunks and marinated it for 2 days. I baked it in a dutch oven at 300 degrees for 2 1/2 hours. Very tender!

Slow-Cooker Corned Beef and Cabbage

I had never eaten corned beef and cabbage before trying this recipe. I only made it because my husband asked for it. So glad I did! It smelled so wonderful all day. I served it with homemade crusty french bread and it was wonderful! Thanks for sharing the recipe!

Red Beans and Rice Mix

What a great gift idea! When cooking for my family, I use andouille sausage instead of ham and smoked sausage. This has so much flavor, and the leftovers reheat well. I serve it with cornbread.
