No Bake Cookies III
These were great! and fast! I changed it just a little. I only used 1 1/2 c sugar and 1/3 c peanut butter and 2 tsp vanilla. Left everything else the same. I did boil for 3 minutes and you do have to move a little quickly when dropping on sheets, but had no problem with them setting up. Again the fastest cookies I've ever made! 20 minutes from start to finish and everyone commented on how yummy they were!

Chicken Breasts with Balsamic Vinegar and Garlic
This was fabulous! We love balsamic vinegar so this was a winner! I did change some things, per other reviews. I skipped the flour, mushrooms, and bay leaf. I cut the chicken breast in half to cook quicker, seasoned with salt, pepper and garlic powder and lightly browned on both sides. Put in remaining ingredients except the butter and simmered covered turning once until liquid reduced to half. Removed chicken. Then added butter and a little cornstarch (half Tbsp) to thicken. *If doing cornstarch remember to whip in a little cold water or broth before adding to pan or it will clump. Served over rice and steamed broccoli!

Spicy Garlic Salmon
Great glaze! My husband loved this. He likes a little kick to his food. Did change a few things though. Used 1 tsp of crushed red pepper flakes for the chile pepper, 2 tsp horseradish mustard for the whole grain, and lemon juice per another review instead of lime. Basically just stirred all ingredients together and poured on salmon. His favorite salmon recipe yet!
