Blue Ribbon Overnight Rolls

Made this again (horrible results the first time) and it turned out much, much better. However, the instructions say absolutely nothing about kneading the dough. so I made 2 batches. kneaded and unkneaded. will let you know how it went.

J.P.'s Big Daddy Biscuits

Wow--I was really impressed, and I thought I made good biscuits. These were easy, light, and gone in a flash. Here in the deep south, big biscuits like these are called Cat Head biscuits, incidentally, because they are as big as a cats' head. Whatever, they are now the only biscuit recipe I will consider. I did have to use less milk, about 2/3 cup.

Can't Tell They're Low-fat Brownies

These were pretty good for low fat brownies, but I have a quarrel with the # of brownies the submitter says the recipe makes. 2 DOZEN???? Don't think so. Makes 12 small brownies. I calculated (using MasterCook) the fat content at 3 grams each when making 12. But, I recognize that is pretty good. After all, they ARE brownies! Overall, good but not fabulous. Will keep the recipe for when I am craving chocolate. Hubby did not like them, said he tasted "something weird" in it (?prunes), but he is mistrustful that I might sneak tofu in there or something. Will make a batch for work and see what the gals say.

Sausage Gravy I

This was a very easy, very tasty sausage gravy recipe. I used vegetarian sausage, and just used margarine to melt and mix with the flour. A keeper, for sure!

Best Brownies

I made this a bit lower in fat without losing any taste by decreasing the margarine to 1/4 cup, and adding in a small jar of baby food prunes. The brownies were gone in a flash. Try it, you will be surprised.

Award Winning Soft Chocolate Chip Cookies

An excellent cookie--I halved the recipe and still wound up with 4 dozen cookies, more than is good for me, anyway! I also used less margarine than is called for, and it turned out very well. Great cookie. I plan to make oatmeal cookies out of it today.

Artichoke Spinach Lasagna

I absolutely adored this. I think it was a tad bit on the soupy side, but will let the sauce reduce a bit next time should take care of that. One of the few recipes I don't have to "tweak" to get it just right. My husband, however, did not like it. He is not a spinach fan. Oh well, he can just fix a sandwich or something the next time I make this!

Creamy Spinach Casserole

I thought this was really good- of course, I couldn't resist the temptation to "doctor" it up a bit. I added a couple of shakes of crushed red pepper, and about 1/4 cup of Parmesan cheese. Wonderful!

Cincinnati-Style Chili

Loved it! Nothing else to say, except don't be put off by the seemingly weird combination of cocoa powder and cinnamon in your chili--it is really good. Discovered that many southerners have never heard of Cincinnati, much less tried their famous chili!

Judy's Strawberry Pretzel Salad

I decreased the butter to 1/2 cup in the crust; used only 3/4 cup sugar in the cream cheese part. It was fantastic!!!! Can't praise this enough! (I also let the jello set up a bit before spreading it on, so no soggy crust). FYI--it freezes well. I partially froze it, made slices in it and froze it the rest of the way. So far, it has been in my freezer for over a week, I just take a piece out and let it sit to defrost while I eat dinner. The crust is still perfectly crunchy!

I made this EXACTLY as directed, and was not disappointed. It was great. I expected a lot of leftovers, even though I only made a half recipe for my hubby and myself. We ate almost the whole thing. It was awesome.

Vegan Black Bean Soup

I was SO impressed with this recipe. I followed it exactly as written, with one teensy change--I added about 1/4 tsp of crushed red pepper instead of the black pepper. Absolutely perfect. Makes a ton!

White Chili

Great chili! Loved the taste! I was worried it might be too spicy, but it was just right. But this was visually appalling. It took some convincing to get my husband to even taste it. Once he did try it, he liked it too. I used chicken broth instead of the water, and added about 1 tsp of cumin and 1 tsp chili powder. I also tried a jalapeno Havarti cheese, which melted very nicely and no mess like many others complained of. I loved the taste, but absolutely you couldn't serve this to anyone outside your family. My husband named it "Predigested Chili" and while he said he liked it a lot, he probably wouldn't ask me to make it again. I would have given it 5 stars for the taste alone, but couldn't get past the odd pink color, so it wound up with 4 stars overall.

New Red Potato Salad

This lacked some little "zip"...I'm not quite sure. Will definately require furthur taste-testing later tonite. Overall, good. Very good, and different from the mustardy type potato salad my husband is so enamored of. He didn't like this, so that actually was a point in the recipe's favor.

Brownie Pie

I never in my life thought I would be complaining (just a little) that something was "too" chocolatey and sweet, but this was. However, I made it for work and everyone loved it with coffee. Overall--good. I'm not diabetic, but I think an insulin shot is called for right about now!

Slow Cooker Dump and Go Cheesy Chicken

I've made this for a long time, with the following change: I mix 1 can Cheddar Cheese soup with 2 cans Cream of Chicken soup. Then just pour over the 6 chicken breasts and cook over low heat all day. Shred at the end and serve over rice. YUM!

Broiled Tilapia Parmesan

Didn't have tilapia on hand, so I used mahi-mahi filets I got from Costco the other day. I, like many of the others, tweaked a bit. I didn't want the sauce to slide off as many had complained about, so I added about 1/3 cup of breadcrumbs to the Parm/butter mix. I also added about a clove of minced garlic, a dash of crushed red pepper, and some dried basil/oregano. I also VERY lightly sprinkled the fish with Blackening seasoning on each side, prior to broiling the fish. My husband has begged me to make this often, and he hates fish. So you know it had to be good!
