Panzanella Salad

A wonderful recipe!! I added some fresh chopped parsley, a combination of fresh purple and sweet basil, used 25 year old balsamic (if you have never had 25-yr balsamic: it's CREAMY smooth and outstanding) and a squeeze of fresh lemon. It was excellent!!!

Poppy Seed Bread II

I made it for my church's bible school-it was a hit!! My oven browned the sides too quickly so I'll try 325 F next go-around. I added a few drops of almond extract to the glaze as well. Delicious!

Mom's Applesauce Pancakes

They were very moist and browned beautifully. I made a 1/2 recipe and the kids really liked it. I think some chunky applesauce or even finely diced apples would enhance the flavor even more. Will try it again next time. Thank you Shirley!

Stuffed Mushrooms II

This is a great recipe. I read the reviews and cut back on the bread crumbs as well (back to about a cup). I also added minced garlic to the sauté, and on the breadcrumbs on top added about 1/4-1/2 tsp. of cajun seasoning as well as parmesan cheese. My caps needed an extra 10 minutes to cook but they were kind of large so adjust accordingly. Enjoy!

Mother's Applesauce Muffins

I love this recipe! It is so easy to make. I made a batch for my daughter's class. My changes include: we had leftover home-made cranberry applesauce from Thanksgiving (Cooking Light-Chunky Spiced Applesauce)so I used that; I cut the sugar to 1 cup and used whole wheat flour (2 c.) and AP flour for the rest. They were just a tiny bit dry (probably due to the lowered sugar and/or whole wheat flour) but brushing butter and sprinkling cinnamon/sugar on top once they came out of the oven did the trick!! Delicious!
