Monte Cristo Sandwich

Mine came out soggy on the inside. Not sure why, but maybe it was the light mayo, even though I used only a little. Will try with mustard only next time. I have had this sandwich in a restaurant and mine did not turn out nearly that well.

Swedish Meatballs (Svenska Kottbullar)

Excellent flavor! Kids asked for repeat! 5 stars for meatballs. I used all ground turkey for health reasons. Turkey is soft which makes browning in pan difficult...they fall apart when turning. Instead, I placed on baking sheet and browned in oven, then followed the rest of the instructions for the meatballs. Reasons for 4 starts is the gravy...too much flour taste.

Baked Teriyaki Chicken

My family loved this both times I made it and they would rate it 5 stars, however, I was a bit put off by the vinegar taste. May try balsamic vinegar or use less next time, but overall it is very good and very easy. Fresh ginger is always better than bottled. Definitely worth a try.

Fluffy French Toast

Saturating regular bread in a mix with this much milk led to soggy French toast. Either you need to have thick, firm, dry bread, or just do a quick dip for regular stale bread. Towards the end of my cooking, I added more egg to the mix to see if that helped, and it was much better. Also added a dash of nutmeg for the last few slices which was a good recommendation from another reviewer. Temp on a griddle should be 300-325.

Roast Sticky Chicken-Rotisserie Style

I've been cooking chicken for 25 years and this is the best whole chicken I've ever made...worth the long cooking time. Like others, I reduced salt by half and didn't miss it. One daughter thought it was perfect, and the other picky one thought the onion flavor was a bit too strong so next time I will use 1/2 an onion and a celery stalk in the cavity. Thanks Sue!

Meatball Nirvana

I started making these before I checked my pantry, so had to use half Italian breadcrumbs, half plain, and had no Italian herb blend. . Also left out crushed red pepper intentionally. They were just OK. They burned on the bottom at 400 degrees, so for last batch I lowered to 350, and turned them halfway, and those did not burn. Not worth the effort in my opinion.

Zucchini-Chocolate Chip Muffins

Excellent! Watch the baking time, tho. My first batch was brown at 20 mins, and second batch was brown at 16 mins. I subbed applesauce for 1/2 the oil, and did one batch with choc, another one without. Both were good but you might want to increase spices if skipping choc. Also, you can always chop regular chips into mini. Thx!

Portabella and Artichoke Stuffed Chicken

I forgot the parmesan cheese so MY dish was really only 3 stars. I am giving it 4 stars because I imagine the cheese would have helped considerably! Also only had artichokes in water, but it calls for marinated artichokes. That would have added flavor also. Scaled this back to 4 servings so had to estimate some of the seasonings. I used only 1/2 tsp pepper in ricotta mix. May try it again with correct ingredients! NOTE THAT IT TAKES APPROX 60 MINUTES to cook.

Peruvian Style Beer Can Chicken

Husband thought it was excellent. I was expecting it to be more moist. Maybe the can opening was covered by skin or something, but the beer did not evaporate like I expected. Seasonings were great, though. Will try again, and punch more holes in top of can next time.
