This is very good!! I'm finding that everytime I have a serving, I want seconds. I used a rather small avacado, all I had, I'm looking forward to making this again with larger one--hoping pudding turns out thicker. I did not use coconut, as I didn't have any. Next time, I also think I will add a 1 Tbs or 2 of peanut butter, yum!

Kingman's Vegan Zucchini Bread

Very good!! Only change I made was not using white sugar; instead I used the 1 cup brown sugar and 1/2 cup "Sohgave" maple flavored agave syrup. Next time, I'll try making them not using the brown sugar either, just use agave or 100% maple syrup. My 8 yr old son helped me bake and gobbled them up :)

Best Lactose Free Blueberry Muffins

Very good, very moist-- especially considering the fact that I goofed and forgot not just the vanilla, but also the lime juice!! I was actually going to use lemon juice instead, I was out of lime. Also I used 2/3 cups honey instead of sugar and used 1 cup whole wheat flour and 1 cup regular all-purpose instead of the 2 cups regular flour. I'm glad I didn't skip the sprinkling of sugar on tops, that was of course my little boy's favorite part! :)

White Bean 'n' Ham Soup

With the fact of how easy this was and how good it is--I would give this soup more stars if I could. Have made this recipe twice in the last few days!!I'm not sure if "Cannellini" beans (white kidney) are the same thing as "Great Northern"beans but, I used cannellini because that's what was in my pantry. Turned out awesome with them! Added small amount of left-over green beans from Christmas dinner to the second batch. My husband loves this soup:)

Easy Iced Coffee

Of all the recipes that I use from this site, this one HAS to be my favorite! I am addicted!! I make these *sugar-free by adding a packet of Truvia to the coffee granules. I also add just a small shot of vanilla or carmel coffee creamer along with the milk, to get the same exact flavor as McD's iced coffee drinks.
