Creme de Menthe Cake I

My daughter loves mint and chocolate, so I thought this would be a fun birthday cake for her! I used a dark chocolate cake mix, hot fudge topping, 4 TBSP creme de menth in the cake and 1 TBSP peppermint extract in the topping. I think I will try it with white cake mix the next time to see which is better!

Baked Potato Skins

These were amazing! Hit of our Super Bowl party! I made them with turkey bacon, low fat sour cream, olive oil instead of veg oil. Next time I will halve the oil ingredients...I had a lot left over. I served them with seasoned sour cream (a restaurant in our area serves them this way and I was able to find a similar recipe).

Slow Cooker Buffalo Chicken Sandwiches

I read through many of the reviews and was getting a little worried about it being too salty/spicy. After cooking for 5 hours, I drained off the sauce and shredded the chicken. I only added enough of the sauce back in to make it moist...all of it would have been way too much. I also used 3 chicken breasts and 2 thighs to give it a bit more depth. It went over very well for our Super Bowl party.

Hearty Split Pea Soup

This was my first time making split pea soup...loved that I didn't need a ham bone for it. I used 4 C vegetable broth and 1 C water. I cooked it on high in my crockpot for 5 1/2 hours and some of the peas were still a bit crunchy. Also, my carrots were still not as soft as we like them...next time I will slice them much thinner.

Pumpkin French Toast Bake

I halved this recipe and put it in an 8x8 dish. I wanted to use challah bread, but they were out at the store. I ended up using a whole grain white bread that was a little too soft. When I went to stir it up it turned to mush. It still tasted good, especially the topping. I can't wait to make it again with better bread. If you've never tried challah in a french toast bake, try it...it's really the best!

Udon Peanut Butter Noodles

Absolutley delicious! My local co-op has a deli item like this that I wanted to recreate at home. I loved being able to add lots of veggies. I sauteed red pepper, pea pods and green onion in a little sesame oil to crisp-tender before adding at the end. Also, chunky pb did the trick and I didn't need additional peanuts. I think I will reduce the ginger to 1 TBSP next time. I didn't use chicken...marinated tofu would be great in this, though.

Grandma's Gingerbread Pancakes

I really liked the idea of these. We LOVE gingerbread at our house. I read the reviews and used heaping measuring spoons of the spices. I also reduced the water by 1/4 cup and added more baking powder. They tasted good, but were really thin. I will try them again usin gonly 1 cup of water and see if that helps.

Lentil Soup

I have been making this lentil soup for yearsand it's always a favorite! I have a hard time finding a 14 oz can of crushed tomatoes. I substitute a can of petite diced and add it in with its liquid. I also double or triple the spinach, depending on how much I have on hand. Using 4 C veg broth and 4 C water gives it a little added flavor.

Fall Pumpkin Spice Latte

This was a wonderful treat this cold, snowy morning! The pumpkin spice coffee really does make all the difference. I was able to find the Godiva brand at Target. I noticed that Dunkin Donuts also had a pumpkin flavor, too. Thanks for the spin on a favorite!

Apple Pie by Grandma Ople

I don't know what it is about this pie...I guess the syrup mixture? All I know is I never prefer a double crust apple pie to a crumb topped one and that has changed! I did take the suggestions of adding some apple pie spice (about 2 tsp) to the apples, brushing the bottom of the pie with egg whites, and puring most of the syrup over the apples and the rest over the topped pie. I loved how the top crust got nice and flakey. I have a deep dish pie plate and had no problems with overflow. Great recipe!

Quinoa Tabbouleh

I made this for a potluck tonight and it was very well received. Kids even liked it! I am not a huge fan of parsley, so I did 1/4C parsley and 1/4C cilantro. I also reduced the olive oil just a bit. It did seem a little bland (probably improves overnight) so I put it a few twists of Trader Joe's Everyday Seasoning with the built-in grinder. That did the trick! I do think adding a bit of feta and /or garlic would be tasty, too.

Gluten-Free Peanut Butter Cookies

We had some friends over for dinner tonight whose daughter has an intolerance for gluten. I thought it would be fun to make a special dessert that maybe she hadn't had before. Everyone thought they were pretty good. I did take the advice of using half white sugar, half brown sugar, 1 tsp baking soda and vanilla. I left out the pecans and added a bit of coconut. Baking them on parchment paper worked well. They were definitely done at 10 minutes.

Fluffy Whole Wheat Biscuits

I made these to go with the Crustless Spinach Quiche from this website. I halved the recipe and just made them into drop biscuits. It made 8 good sized drop biscuits. I made a little honey butter and served it with that. Tasty!!!!!

Crustless Spinach Quiche

Great, versatile recipe! To make it a bit healthier I used 4 eggs and 1 egg white, 1 cup each of 2% sharp cheddar and mozzerella, and some garlic to the half of an onion I had. I also diced up a lone roma tomato I had and added that to the spinach mixture when it was almost ready to combine with the eggs and cheese. I served it with Fluffy Whole Wheat Biscuits from this site. A definite keeper!

Pumpkin Pancakes

These were delicious! I used a 50/50 blend of whole wheat and white flour, 2 small eggs, a bit more brown sugar and added a tsp of vanilla. The batter is thick but I had no problem once I poured it on to the griddle. I will make these again and again!

Tasty Lentil Tacos

I didn't change a thing when I made these. We really liked them and tried them with both hard shells and w.w. torillas. Hard shells were the favorite with the kids. My cooking time for the lentils was closer to 45 minutes.

Roasted Cauliflower Soup

This got a thumbs up from both my kids, which I wasn't expecting! I didn't have the flavored oil, but I think that was okay. Make sure you have enough cauliflower...my head was pretty small and I think it would have been much better with more cauliflower. We did add a small amount of shredded cheddar on top before serving.

We really liked this recipe! I did add about half of a chopped red and orange pepper each for some color and to make it more of a main dish. I am looking forward to having the leftovers cold tommorow for lunch!

Unbelievable Chicken

This was very easy to put together and everyone seemed to like it. Much better than anything you would get in a bottle with all those preservatives. It's nice to have a go-to marinade that's made with common ingredients that I would probably have on hand.

Black Bean and Salsa Soup

I had a 25 oz can of black beans to work with, so I used 1C salsa, 1C chicken broth, squirt of lime juice, and a half tsp each of cumin and chili powder. I pureed it with an immersion blender, then added 1C of corn. Easy and delicious!
