I have made lots of banana bread, but never had one turn out this moist and flavorful. I used 3 cups mashed bananas. I added the eggs, brown sugar, and melted butter to the bananas. In seperate bowl I combined the dry ingredients and added a teaspoon of cinnamon, 1/2 teaspoon ginger & 1/2 teaspoon nutmeg. I folded the banana mixture into the flour mixture with a wooden spatula, careful not to overmix. Poured batter into a 9x13 buttered glass baking dish. Combined 3 tablespoons melted butter, 1/4 cup brown sugar & 1/4 cup flour to make a crumbly mixture, then sprinkled on top of batter. Baked at 350 for about 50 minutes, until toothpick inserted in middle came out clean. It doesn't get much easier, or delicious!
