Golden Sweet Cornbread

Crescent-Wrapped Brie

Served this as an appetizer on Christmas. Delicious and so easy! I added 3T of strawberry perserves. YUMMY. It was gone in minutes--seriously.

Coconut Curry Pumpkin Soup

This was phenomenal--a great addition to our christmas dinner. I only made a few changes out of necessity, though I'm not a fan of changing a recipe before trying. I made it in the crockpot by sauteing the onons and garlic first then adding all the ingredients. I omitted the coconut oil (didnt have any) and only used a small mixture of butter/EVOO for sauteeing. Increased the garlic to 2 cloves, curry to 3 tsp, and the salt to 3/4 tsp. I had no veggie broth (hence increasing the salt) so I just used water in place of it. As another reviewer suggested, I added nutmeg, cinnamon and also a bit of pepper to taste. It was very nice and super spicy--just the way we like it. No ordinary soup for us. My husband RAVED about this soup for three days until it was all gone. I have to make it again soon.

Buttermilk Pancakes I

This was a fabulous base recipe. I have tried many recipes before and have never had pancakes so light and fluffy! This morning I woke up with a dire need for banana & chocolate chip pancakes. But I wanted to start out with this base, so I just altered it a bit. Here's what I did: substituted 1/4 c whole wheat flour to sneak a little nutrition in there. Substituted the oil for 1 small mashed banana. And added a dash of salt and 1/8t vanilla. Then sprinkled with chocochips. The result was heaven...on a plate. Topped with a dallop of earth balance and maple syrup (though honestly, it wasn't really needed, but the kids have a moral obligation to put syrup on pancakes). They were a hit all around and no one would guess there was any whole wheat flour in there ;)

Juicy Thanksgiving Turkey

This was a great recipe. Easy to follow and VERY tasty. The only thing i changed was that I rubbed the turkey with salt the night before and soaked it in water overnight (in the fridge). The next morning, I rinsed it off, rubbed it with butter, then followed the recipe. I also put it in a bag. When serving, I served it with orange slices and dribbling the orange juices over it only made it yummier. Seriously, the flavor of this turkey was spectacular. I didn't really find that it was super moist, not sure if I might have done something wrong. Don't get me wrong, it was great, just not incredibly moist as I hoped after the rave reviews. Still worth it though, I will certainly use this recipe again. The leftovers were phenomenal. The stuffing made with the juices was delicious--and I don't even like stuffing!

Pumpkin Cheesecake II

This was magnificent. I thought it would be difficult because there were a lot of ingredients, but it wasn't too difficult to make. And it really was worth the effort. I did have a bit of extra batter, so I wish I had made two 8inch pies instead of trying to fit it all into a 9 inch. The pie was wonderful though. It did not crack. I turned off the heat at 50 minutes and just let it sit in the warm oven. Then I let it cool and refrigerated the night before our Thanksgiving feast. It tasted heavenly. The spices came together just right. I topped it with whipped cream and roasted pecans and it got rave reviews. Even better the next day ;)
