Tomato Bisque II

I was a bit discouraged with the results from this recipe. Guess I was expecting something with a little more tomato flavor. Being short on whole tomatoes, I had to use 3 roma tomatoes (about 2/3 lb.) and add two cans of organic diced tomatoes. After trying the food mill for a while, I gave up and grabbed the blender, blending for a few seconds, leaving lumps in the tomatoes for a bit of texture. Completed the rest of the recipe and, after adding the roux and milk blend to the tomato/spice blend, seeing and tasting that I had much more milk than tomatoes, I grabbed a 15oz can of tomato sauce and added it. It turned out okay although if I used the recipe again, I would add at least 3, if not maybe 4 beef bouillon cubes. And, I would expect that the bisque could have been a little thicker in so much as I had to add the can of tomato sauce. My wife has ask that I go back to an old family recipe that I use on occasion for tomato bisque.

Blueberry Sauce

If I could give it 6 stars, I would. You can't buy this kind of flavor in a store. As with a previous reviewer, I cut the cornstarch to using 2 TBLS rather than 3. This would be to the taste of your guests. I felt that 2 TBLS still made a reasonably thick sauce. I prepared the sauce roughly 1 hour prior to serving, and guests commented on no undesireable orange flavor even when I ask them about it. Thank you for a great recipe. My grandkids are going to love it.

Christmas Wreaths

Whether you are a fan of marshmallow treats or not, these cookies bring ooh’s and ah’s from both adults and kids. On top of which, they look absolutely great on a Christmas cookie tray. One learns quickly, if they want to mess with trying to make wreaths with a hole in the middle. After messing with this 1st cookie for about 30 seconds, I changed my methodology to putting globs of the green mixture down, and it worked great. In my opinion, and in the opinion of the “consumers”, they looked very “holidayish”. My frosted sugar cookies and almond roca appeared just so-so, but with these marshmallow treats on top of my holiday tray, it looked great. As other reviewers suggest, you need to work quickly when putting the red M&M’s on the wreaths because the marshmallow and corn flake mixture will harden enough that the candies may be reluctant to stick on top if not done within 3 to 5 minutes of being placed on the tray. The method I used to lay the sticky wreath globs down was to wear latex gloves covered with melted butter. Another hint that I used from previous readers is to use parchment paper; works fine. Only difficulty I had was to get the wreath mixture to adequately harden. I finally placed them in a cool place and they hardened adequately. Bottom line; the consumers (both kids and adults) made a point to say the wreaths tasted really good. They will be on top of my Christmas trays in future years again.

Hearty Halibut Chowder

Good Recipe; the addition of cream is a good twist. Warmed up the umteenth time, the chowder gets better and better. I can't leave well enough alone, so, after trying the recipe as printed, my next batch, as with many halibut soup or chowder recipes, I induce a few more ingredients, i.e. I've added 4 cups of sliced mushrooms several minutes after adding the potatoes. And to thicken the chowder a bit, I add corn starch as metioned in other reviews. You can't hardly hurt this recipe. My next batch of chowder, I'll also add some chopped celery; this always goes good with halibut soups and chowders.
