No Bake Chocolate Peanut Butter Cookies

Reviewed: Dec. 5, 2013
DELICIOUS!! No bake cookies are so easy and they don't make me feel as guilty about eating sweets. To make this recipe a little healthier I did make a few adjustments BUT I do believe these would've turned out just as good without my changes. 1. I substituted half of the butter for coconut oil. 2. Substituted half of the sugar for light brown sugar (not packed). 3. I used crunchy peanut butter...yum! 4. I put them in the fridge to cool and it took about 30 minutes. We couldn't wait to eat them and next time I will double the recipe because these are going quickly. Thank you for posting such a mom-friendly & kid approved recipe!

Sweet, Sticky and Spicy Chicken

Reviewed: Jun. 7, 2013
I doubled this recipe because i had several chicken thighs and i also followed the advice of some other reviewers by flouring the chicken first and cooking the chicken a little longer than 1-2 minutes before adding the sauce. I did omit the ginger but only because i didn't have it. This recipe reminds me of General Tso's chicken. Next time i'll add some red pepper flakes to turn up the heat and make a copycat General Tso's! Thanks for posting i think it's great.

Easy Batter Fruit Cobbler

Reviewed: Jun. 2, 2013
DELICIOUS!! I've never made cobbler before but my grandfather mentioned that he had some strawberry cobbler and i just happened to have some fresh picked strawberries at the house i needed to use. I had 4 cups so i doubled the recipe, except for the butter (only used 7 tbsp) and the 1 tbsp of sugar remained the same for a 9 x 13" pan. I also used wheat flour (about 1 1/4 cup for a double batch). Then cooked it for 45 minutes because my oven cooks fast. It turned out perfectly; crispy edges & spongey cobbler center!! I would highly recommend this recipe for an easy and delicious dessert and I will be using this one again...SOON!

Strawberry Vanilla Pancakes

Reviewed: Feb. 18, 2013
I give this 4 stars because i believe it's a good concept but some changes are necessary to make it great! I used 3/4 cp of whole wheat flour and substituted buttermilk, ommitted the oil and only used 2 TSP of vanilla. After doing that these turned out to be some of the BEST pancakes i've ever made!! They were not runny at all. I have never tried putting strawberries in pancakes but they were delicious with a little bit of maple syrup. I will be trying these again!

Linda's Lasagna

Reviewed: Jan. 28, 2013
I have made this recipe several times and it always turns out great! I think it has to do with the layering technique. Also, don't be afraid to make some substitutions/additions, like spaghetti sauce instead of paste or adding mushrooms, etc. It will still be good.

Gramma's Apple Bread Pudding

Reviewed: Nov. 7, 2011
SOOOOO GOOOOD! I had some apples that were going bad and needed to find something to do with them. I found this recipe and tweeked it a little bit but i'm sure it would be great without changes. I didn't have enough 'soft' bread crumbs so i used some dry bread pieces from a variety of different wheat breads and because of that i increased the milk by about 1/2 a cup. I also used Pumpkin Pie Spice and omitted the vanilla extract but only because i didn't have any. My fiancee couldn't wait for it to finish cooking but after he took 1 bite he stopped playing his PS3 to tell me how good it was. DELICIOUS and i will be making this again!!!

Baked Coconut Shrimp

Reviewed: Aug. 2, 2011
I really liked this recipe for coconut shrimp! It was very easy to follow but just two things. One, it's not necessary to put that much ceyenne powder in the recipe unless you like stuff VERY SPICY. Two, i didn't flip the shrimp and i'm not sure how i would've without getting frustrated. Also, next time i'll use bigger shrimp (like 30-40) because the coating really over-powered the shrimp.

Honey Banana Muffins

Reviewed: Oct. 21, 2010
These are awesome! I love the idea of substituting sugar with honey and it actually gives it a moist texture. The only adjustment that i made on this recipe was that i didn't have any nutmeg so i used pumpkin pie spice instead. These didn't stay around the house for long! I will fix these again in the future. Thanks!

Spinach Lentil Soup

Reviewed: Oct. 21, 2010
WOW!!!! I was pleasantly surprised by this recipe! I cooked it last night for my family and although my kids wouldn't touch it because it 'looked gross' my fiancee and i had to go back for seconds. I did make a few adjustments. I added 1 cup of rice instead of 1/3 cup, switched the amount of water and broth using 6 cups of beef broth and 2 cups of water and added 1/2 tsp of cumin and 1 tsp of curry and ommitted the onions and peppers (but ONLY because i didn't have any). This is now one of my new favorite dishes and i can't wait for lunch to eat it again! YUM!!! This is a great recipe! Thank you for sharing!
