Lentils And Spinach

This dish was very flavorful. I doubled the lentils and used 2.5 cups homemade chicken stock instead of water, and also added a can of diced tomatoes. An added bonus: this dish was very cheap to make and I had almost all the ingredients in my cupboard!

Pumpkin Frozen Yogurt

This was pretty good! I love the combination of the pumpkin and syrup and the tangy yogurt. I don't have an ice cream maker so I used the blender/freezer method recommended by another user, but I wasn't completely satisfied with the texture. I might get an ice cream maker just for this recipe!

Fudge Brownies I

I used one less egg and one more ounce of chocolate than the recipe called for, and they turned out great! Brought them to work and my coworkers ate the whole pan.

French Bread Rolls to Die For

I've made these several times now and they seem to be foolproof. I knead the dough and let it rise twice before dividing it into rolls and spray the oven walls with cold water while the rolls cook to give them a crispy crust. Very good, my boyfriend can't stop eating them.

Garlic and Leek Ditalini

Cuban Ropa Vieja

This was absolutely delicious. Next time I'll buy a better cut of beef, because the one I used was full of gristle and hard to shred. But in spite of that it still turned out great!

Slow Cooker Chicken and Dumplings

I added 1/2 tsp cumin, 1/2 tsp poultry seasoning, 1/2 tsp parsley and a dash of seasoning salt and let the dumplings cook for an hour and a half. This was so easy I made it while on crutches!

Brooke's Best Bombshell Brownies

These are quite possibly the best brownies I've ever had. I used half white and half brown sugar and milk chocolate chips. They are so good that I've been eating them for breakfast! Probably not the most nutritionally sound practice, but I can't stay away from them.

Vegan Curried Rice

Maybe it's just me, but I did not care for this recipe as is. It somehow managed to be too spicy but still not flavorful enough. That could be because I omitted the soy sauce, though. To make this recipe more to my taste I added an extra cup of water for cooking, diced onions, 3/4 cup tomato sauce, and 2 tbsp sugar. I threw in some frozen peas and red peppers near the end as well. With some alterations to the quantities, this recipe made a great base for the final product!

Curried Coconut Chicken

AMAZING recipe! I had some Trader Joe's Biryani Curried Rice in the freezer I wanted to use up, and I chose this recipe to go with it. I didn't have any tomato sauce so I used about a half cup of spaghetti sauce, and I added an extra dash of curry powder during simmering for a little flavor boost. SOOOO good, especially with the Biryani rice!
