Coconut Buffalo Chip Cookies

These were super easy and good. I have never baked with coconut oil before--a not a big baker--and the taste was really nice. They made the house smell divine. The only thing I wasn't sure of was when I creamed the coconut oil and the sugar, some of the coconut oil was globby. Just here and there; mixed it for a long time but finally just gave up with some globs here and there. It didn't seem to affect the cookie. I also used an all purpose gluten free flour and with the strong sweet flavors of the cookie, the weird after taste in GF flour was completely gone. Thanks for a nice easy recipe to satisfy my sweet craving.

Shrimp Summer Rolls with Asian Peanut Sauce

Very nice flavor but things didn't come together for me. The veggie/teriyaki sauce was too watery and then affecting my rolling--they ended up a little goopy. The peanut sauce was delicious but super super thick so I added a fair amount of hot water, to thin it out. Then I tried the suggestion of baking them as I don't have a grill and I knew frying them wouldn't work b/c they were too goopy--but did the 10 minutes as suggested by another poster and the wrapper was gooey. Taste wise, the flavors were so nice and it seemed like a healthy recipe with potential but it was way too garlicky for me.

Peppered Shrimp Alfredo

Yum! This was so good and really easy to throw together. It looks really beautiful on the plate, too. I like spicy so I increased the cayenne a bit but it was a little too spicy so next time, will just do the 1 tsp. Thanks for an awesome recipe.

Red Enchilada Sauce

I followed the recipe, as I always do the first time I make something. I was throwing together a tamale casserole and didn't realize it called for enchilada sauce and I didn't have any. Anyhow, I thought it was really good and it was so easy. I was really happy when it was simmering to see the beautiful color, exactly what I would want. Thanks!

No-Noodle Zucchini Lasagna

So many have already reviewed this so maybe no one will ever read this but... This was SO good. The flavor is amazing and with the amounts of ricotta and cheese, it tastes like "real" lasagna. I am gluten sensitive so can't do wheat anymore, and prefer to keep away from grains in general. I did the salting, and the tricks to make it less watery, but it still was a bit watery. When I reheated it the next day, though, it was PERFECT, so I think I'm going to cook it once, put it in the fridge, and then just reheat/eat it the next day. It makes a lot. It took me more than the stated prep time, but I made it in two pans, and froze one pan. The time was well worth the amount of good food I got. Thank you for a great recipe!

5 Minute Microwave Cornbread

Wow, this surpassed my expectations, too. I made it gluten free by using GF all purposse flour but still made it exactly to recipe. In my smaller micro, it took 4 minutes. It was SO easy. Sliced the pieces in half, buttered them, and enjoying them with a nice homemade soup. A perfect winter meal.

Baked Egg Rolls

Loved these. I am gluten intolerant so I used rice paper, which meant they weren't as pretty, but the taste was really yummy. Loved the sauce that was mixed with the mix. I threw together a peanut butter, soy sauce, and water sauce for dipping.

Pasta With Peanut Sauce

I liked this even better the 2nd day. The fineness of the thin spaghetti with the interesting peanut butter, soy and ginger combo was nice. For me, I did not find it too peanutty. I did double the chicken broth as the only change to the recipe. Thanks.

Bacon Broccoli Salad

Have been wanting to find a good broccoli salad and this fit the bill. I was just about to cook the broccoli but resisted the urge; not a super big fan of raw broccoli but this salad was so yummy. I used 2 C broccoli uncooked just because I wanted to use up what I had but everything else followed to the letter. Thank you! Loved it.

African Chicken Stew

Fantastic! This is one of the best things I've made in a while. Thank you for the amazing recipe. The spices with the peanut butter, and with the garbanzos--great combination. I made it exactly as the recipe called as I don't know a thing about food from Sierra Leone. I probably will add a cup of water, too, next time, just because I think I would like to have more sauce.

I'm assuming the brown rice is already cooked? I want the proportions to be right. I bought some brown rice but it needs to be cooked longer than that.... So the rice is cooked but the ground turkey and veggies get cooked up in it?

Potato Chip Chicken

I am giving this 5 stars because it was very good AND very easy. For the ease of preparation, it's a very good little recipe! I am searching for gluten-free recipes (and also where the ingredients are readily available), so this was great for that. I baked it, too, as others suggested. It's strange but I didn't find it greasy at all. I thought it was crunchy and delicious. I definitelly will make this again.

Tofu and Veggies in Peanut Sauce

This was so good. What a great night to come home after a long day and throw this together--so easy and yum! I did not have molasses on hand so subbed one tbsp brown and one tbsp white sugar. I served mine on a bed of rice. Thanks for sharing the recipe.

Fabulous Cilantro Pesto

Yum! And so easy. I live in Korea and cilantro is hard to come by, but a nice Canadian knew that my Californian self would appreciate some cilantro from the big city so I had a bunch. For my taste, I'll prob cut the garlic a bit the next time I make it, but I LOVED it. I put it over rice noodles. I will try it over chicken, too. Thank you for the very good recipe.

This is the second time I've made it--love it! It is easy, has nice veggies in it, and I can tweak it so that it's wheat-free by skipping the soy sauce. This is the best new recipe I've tried in the last few months, and the only one I really want to keep in my repertoire. For my taste, a tiny bit less salt (along with no soy sauce) was salty enough for me. Thanks!

Chicken and Biscuit Casserole

Very good. It's a huge load of food, though. I will definitely try to halve it next time. I subbed a bisquick substitution recipe for the bisquick mix, and I used corn instead of peas, simply because I live in a country where neither of those is around. It did remind me of a potpie. Thanks for the great recipe.
