My husband and I grew up in New Mexico and this is exactly right! The trick is to use lard!! I doubled the recipe for a 4 pound pork tenderloin, as we like extra sauce. I cubed the meat, put it in the icebox overnight and then cooked in the Crockpot for 8 hours on low.

Green Bean Bundles

I made these for Thanksgiving and they were great. The sauce really is the best part! I did not cook the beans long enough though, so they were very crunchy. Next time will need to cook them until they are almost done and then put them in the oven.

Easy Lima Beans

Really good, but the little onions weren't great while eating the beans. I would suggesting keeping them in large chucks and then straining out before serving.

Biscochitos Traditional Cookies

Made these for my son's baptism - wonderful! I used rum instead of brandy and 2 teaspoons of anise seed extract. I coated cookies in cinnamon/sugar before and after baking. You must make the cookies very thick, otherwise they will crack and break while you are coating them.

I followed this recipe exactly and there is simply not enough liquid. I ended up adding an extra egg, another tablespoon of butter and the sherry before it became dough like.

Chicken with Green Peppers in Black Bean Sauce

This recipe was excellent! Very easy to make and tasted great that night and for left overs the next day. I left out the cilantro (as I hate it) and only used 1 green pepper.

I made this at 7500ft so made a few changes (more flour and water). The top of mine cracked and sunk in the middle, but since I served with cherries on top, no one could see the cracks. I made with 10" dish, and casserole dish full of hot water on bottom shelf of oven - left in oven for 2 hours after turning oven off from baking. Made with graham cracker base with butter and cinnamon. The only thing missing was taste - it was the right consistency and texture, but it was bland. Maybe I'll try some lemon juice next time.

Margaret's Keftedes (Greek Meatballs)

Very good - used them in gyros. For those reviews that said it was too wet - you HAVE TO ROLL THEM IN FLOUR!! They are very wet, but will form a sloppy ball that needs to be rolled in flour. They will hold their shape as you fry them.

Pepper Steak

This was a very good recipe - I made with 2 packages of unseasoned ramon noddles, tossed with seasame seed oil. I used 1 red, 1 yellow and 1 green pepper pepper instead of all green, and no waterchestnuts. I cooked everything with butter rather than oil.
