Manicotti Alla Romana

Reviewed: Sep. 19, 2011
This was great! I used jumbo shells instead of manicotti because they are easier to stuff. I used a 9x13 inch pan, but still only used 1/2 of the meat filling and 1/2 of the shells. I froze the rest for later. I recommend doubling the sauce.

These were okay - a little too much bread, not enough filling.

Chantal's New York Cheesecake

Reviewed: Jul. 18, 2011
I made this at 7500ft so made a few changes (more flour and water). The top of mine cracked and sunk in the middle, but since I served with cherries on top, no one could see the cracks. I made with 10" dish, and casserole dish full of hot water on bottom shelf of oven - left in oven for 2 hours after turning oven off from baking. Made with graham cracker base with butter and cinnamon. The only thing missing was taste - it was the right consistency and texture, but it was bland. Maybe I'll try some lemon juice next time.

Biscochitos Traditional Cookies

Reviewed: Nov. 20, 2010
Made these for my son's baptism - wonderful! I used rum instead of brandy and 2 teaspoons of anise seed extract. I coated cookies in cinnamon/sugar before and after baking. You must make the cookies very thick, otherwise they will crack and break while you are coating them.

Pumpkin Bars

Reviewed: Oct. 7, 2010
I took some others advice and increase the pumpkin to 30 oz and increased the cream cheese in the frosting to 8 oz. These bars are great - they are sticky and soft like the inside of a pumpkin pie, but cakey enough to hold their shape on a plate. I have made them several times as a hostess gifts and they have always disappeared quickly.

Traditional Gyro Meat

Reviewed: Sep. 20, 2010
I made exactly as listed. The taste was good, however I could not slice it, it just crumbled. I will try again without the moist towel and water in oven.

This was excellent chili - not hot at all. I doubled the washabi and used 3 green chilis. 1 can kidney and 2 cans pinto. Prefect!
