Healthy and Delicious Cherry Pie

Reviewed: Aug. 26, 2010
Delicious! I used instant steel cut oats, and let them soak in 4 tbls. water while I pitted the cherries. Added 2 tbls. flour to the sugar that I put in the cherries. I did add 1/4 c. wheat germ to the crust, added another tsp vanilla, and held out about 1/2 c. to sprinkle on the top. Pre baked the crust while the oven was preheating, and baked it for 13 mins at 425, then lowered the temp to 300 and baked another 10 mins. It's like a cherry crisp.

Simply White Bread II

Reviewed: Aug. 24, 2010
Really good and it doesn't crumble when sliced. I used 2 c. white whole wheat flour, 1 c. AP flour, I used kosher salt and added 2 T. buttermilk powder. UPDATE: I bake alot of bread and this one has become a favorite. I now use melted butter instead of oil. I don't have a bread machine so I just proof my yeast and mix it up. Very good bread.

Cherry Nut Muffins

Reviewed: Aug. 1, 2010
Great taste! They didn't rise up like regular muffins. I used 1/2 c. wht. sugar, 1/2 c. brown sugar and 1/2 c. honey, white whole wheat, instead of ap flour, fresh dark sweet cherries and added 1 tsp vanilla. I had a yield of 24 mini muffins, 12 regular muffins and two custard cups of little sweet breads.

Oven Chicken Fingers

Reviewed: Aug. 30, 2010
These are so good, and so easy. I've made them several times. I spice my own bread crumbs and use salad dressing (your choice) instead of the oil. Leftovers are just as good. I frequently chop them up and add to salads.

Zucchini Patties

Reviewed: Jul. 22, 2010
These were REALLY good! I guess I used the recipe as a "base" because I added 5 chopped baby port mushrooms, 1 chopped sweet red pepper, potato flakes, garlic, black pepper and paprika. I didn't drain the zucchini, or add salt until it was in the pan, I also omitted the flour. I switched out the mozz. for sharp white cheddar and added an egg. I let it sit for a minute or two while the pan heated up to allow the potato flakes to absorb some of the zucchini juice. These were so good. I served them with smashed (lightly seasoned) avocado.

Blue Cheese and Cracked Pepper Bread

DELICIOUS!!! I just took these out of the oven. (I should know better than to eat stuff right out of the oven. . . HOT!!) I used 1/2 c. butter, 1/2 cup buttermilk and White Whole Wheat Flour. The recipe made 13 hamburger buns (I ate one minus the hamburger). Thanks BigShotsMom :) I'll make these frequently!

Egg-Free Dairy-Free Nut-Free Cake

I made this cake last week. It was amazingly delicious. I had/used Special Dark Cocoa and Special Dark Chips. I find sifting the cocoa makes it easier to incorporate. Also used 3/4 c. chips. Kids ate it all in one night.

Italian Seasoned Bread Crumbs

Reviewed: Apr. 20, 2010
This is a good recipe. I've been making my own bread for several monthes. Any bread "past it's prime" finds new life in bread crumbs. I always have bread crumbs in the freezer and when I wanted Italian flavor, I used these seasonings. Well done!

Mock Lobster

Reviewed: Apr. 19, 2010
I've been using this marinade all winter. I actually thought I'd already rated it. Depending on how much chicken I am preparing, depends on how much oil I add to the marinade. Overall, I'm sure I use less. I used garlic powder and added no more salt to the recipe than is in the soy sauce. This is an EXCELLENT recipe. I've broiled it and am looking forward to grilling it this summer. When I take BLSL breasts out of the freezer, I add the marinade to the frozen breasts and let it thaw in the marinade. Very tasty! The melted butter dip contributes to the "illusion" of lobster, and is very good. But not necessary to enjoy this dish. Bon apetit!

Wiener Wraps

Reviewed: Jul. 13, 2010
We really liked these. I used 2 c. White Whole Wheat flour, added the sugar to the yeast/water mix. The dough worked wonderfully! I used ketsup and sharp cheddar in 3 of them. In the other 4 (my pkg had 7 hot dogs) I used Jack and Colby cheese and finely chopped onion and jalepena peppers. Rolled the dough very thin and slightly stretched the sides up and sealed them shut. I had enough dough to make a sandwich bun. :)

Banana Split Muffins

Reviewed: Sep. 21, 2010
I made two versions of this recipe today. Both delicious. I had 1 1/2 - 2 c. dark sweet cherries to use up, so I cleaned and pitted them, sprinkled with a couple of Tbl. of sugar and split them between the two recipes, omitting the maraschino cherries. The first batch, I used only 1/2 c. sugar and added 1 tsp. vanilla, 1/4 tsp ginger and 1/3 c. toffee bits. It took longer to bake because of the fresh cherries, but is very reminiscent of a Banana Split. The second batch I used White Whole Wheat flour, no sugar, 1/4 c. dark corn syrup, and low fat vanilla yogert instead of mayo. I also kept the vanilla, ginger and toffee bits in this recipe. I think I actually prefer the ones with yogert. They're less dense, more cake-like, but still delicious! Great recipe. Thanks for sharing.

Pumpkin Cream Cheese Muffins

Reviewed: Sep. 29, 2010
These are delicious and an exercize in "getting everything even". I made the cream cheese layer exactly, I used brown sugar, more spices and more pecans in the streussel layer. I subbed one cup ap flour with 1 cup white whole wheat, 1 c. sugar for brown sugar and used Healthy Balance instead of olive oil. I got 24 regular muffins but was short on the cheese layer and had some muffin batter left over. Next time I'll use the whole can of pumpkin and adust the other ingredients, and plan for a few mini's. . . and there will be a next time. I've eaten two and I quickly rushed 12 to my neighbors. Thanks for sharing!
