Simple Carnitas

oh - my - merciful - heavens. Here's what happened. I got a deal on a bone - in shoulder. Over twelve lbs. I really do not like to fool with great big pieces of meat. Trust me, it was worth it. It's probably 30 mins away from removing from the oven. My daughter and I couldn't resist (I mean, the SMELL is amazing) So when I went to turn it, we picked off some done parts and threw them in the skillet with onions and peppers. We ate this on homemade tortillas with cheese. (I'm stuffed) It will have taken it 6 hrs. and 15 minutes at 325. I cut the yucky stuff off. Cut the oranges, onion and 1 lime in the bottom of my roasting pan ( I would have thrown the bay leaves in here, but I didn't have any.) I made a rub of the kosher salt (and yes, there is a huge difference. It will be too salty with table salt), cumin, garlic and peppercorns. I turned it a couple of hours after sticking it in. Before it all fell apart, I got the fruit and most of the onion and pepper corns out of the broth and added another cup of water. It wasn't quite totally off the bone last time I checked, but it had been shredded into the flavorful broth and I'm looking forward to enjoying this for quite awhile. Thanks, Ken. AWESOME recipe.

Cherry Nut Muffins

Great taste! They didn't rise up like regular muffins. I used 1/2 c. wht. sugar, 1/2 c. brown sugar and 1/2 c. honey, white whole wheat, instead of ap flour, fresh dark sweet cherries and added 1 tsp vanilla. I had a yield of 24 mini muffins, 12 regular muffins and two custard cups of little sweet breads.

Wiener Wraps

We really liked these. I used 2 c. White Whole Wheat flour, added the sugar to the yeast/water mix. The dough worked wonderfully! I used ketsup and sharp cheddar in 3 of them. In the other 4 (my pkg had 7 hot dogs) I used Jack and Colby cheese and finely chopped onion and jalepena peppers. Rolled the dough very thin and slightly stretched the sides up and sealed them shut. I had enough dough to make a sandwich bun. :)

Soft-N-Fluffy Hamburger Buns

I just took this out of the oven. I wish I would have doubled the recipe. I made bread, next time rolls and bread. I used White Whole Wheat flour and 2 tsp VWG. It only took about 2 1/2 c. flour. Very light. Thanks WFDM! I'll make many times.

Agua de Jamaica (Hibiscus Water)

AWESOME!! I don't have a gallon pitcher, so I halved the recipe, got a lil too much nutmeg (oops!) still delicious. Going to try to gradually reduce the sugar. Excellent recipe. Thank you SB!! UPDATE: This has become my quaff du summer. In a 1/2 gl pitcher I've reduced the sugar to 1 medium cone of piloncillo and 1/2 c. white sugar. For some added goodness, I've squeezed a lime or two or three in it as well, so refreshing!

Molasses Spice Muffins

These were delicious. I used drk brown sugar (personal preference) all White Whole Wheat flour, doubled the spices and added 1/4 tsp cloves. I also added 1 c. mini choco chips.

Singkamas (Jicama) Salad

Delicious! I used an orange pepper instead of the green bell, 4 banana peppers instead of the chile peppers and I didn't have ginger root (I thought I did) so I added a teaspoon of hot chili powder to the dressing. Very nice flavor. Served with Pollo Oaxaca and beans and rice.

Soo very good!! I couldn't find Oaxacan cheese, so had to use Jack, maybe added a touch more garlic. Will make many times! Thanks Avon. Looking forward to leftovers. Delicious!!!

Italian Seasoned Bread Crumbs

This is a good recipe. I've been making my own bread for several monthes. Any bread "past it's prime" finds new life in bread crumbs. I always have bread crumbs in the freezer and when I wanted Italian flavor, I used these seasonings. Well done!

Wow!! I made my own pie crust recipe and used more jelly in the middle, but no icing. It didn't need it, but I'm sure it's a nice addition. These are even better than the kind you buy. Not nearly as dense! I'll make these again with other flavors! Thanks!

Mock Lobster

I've been using this marinade all winter. I actually thought I'd already rated it. Depending on how much chicken I am preparing, depends on how much oil I add to the marinade. Overall, I'm sure I use less. I used garlic powder and added no more salt to the recipe than is in the soy sauce. This is an EXCELLENT recipe. I've broiled it and am looking forward to grilling it this summer. When I take BLSL breasts out of the freezer, I add the marinade to the frozen breasts and let it thaw in the marinade. Very tasty! The melted butter dip contributes to the "illusion" of lobster, and is very good. But not necessary to enjoy this dish. Bon apetit!

Buttermilk Cinnamon Rolls

So delicious! The winter day I made these, my daughter and her friend were leaving for work just as they came out of the oven. I quickly iced them, wrapped some in foil and sent both off with a packet of hot rolls. They shared with their co-workers who wanted to know where they could get more, LOL!!

Cabbage Waldorf Salad

I have made this three times. I don't use the marshmallows, I didn't drain the pineapple and I only used 1/2 c low fat mayo, added yogert for the rest of the stir. I've even added red cabbage (those colored veggies are so good for you)! It makes alot, so I rolled grapes in lemon jello powder and froze them, then add them to individual bowls. I'll keep making this!

Wonton Wrappers

Great recipe. I made the dough and let it rest under a damp kitchen towel while I made the fillings (the dough needs to rest to make it easier to roll). Rolled out in abit of corn meal. I'll use this recipe often.

Amish White Bread

I used Kosher salt, a canola/soy oil, 4 cups whole wheat flour, and kneaded in about a cup and a half of all purpose flour. I will use this recipe often. Very good bread (I painted butter on top when it came out of the oven).
