Delicious! I had been wanting to make these since the picture was posted. The only change I made was to use brewed coffee in the date/chocolate mixture instead of water. Loved these!

Lazy Cabbage Roll Casserole

I made this vegan by using TVP reconstituted in tomato bouillon. Didn't have a parsnip so added chopped sweet red pepper and some minced garlic. Instead of the paste, sauce and dressing, I used an organic spaghetti sauce. Everyone enjoyed this. Sadly, no leftovers.

Pastina and eggs

Comfort food deluxe! I only had radiatore pasta in the house, so that's what I used. I added some ground mustard, white pepper and onion powder. More cheese, 1/4 c. asiago and 1/2 c. sharp cheddar. . .instead of milk I used sour cream to smooth it all out. . .I ate the whole thing. . .Thanks Allie!

Peppy's Pita Bread

I don't have a bread machine so I made it by hand. Used honey instead of sugar and safflower oil instead of veg oil. I let rise after mixing, used parchment paper on my baking sheets and let them rise on the parchment after rolling out. So FUN to watch them puff up in the oven (through the oven window, with the oven light on). When split there is a perfect pocket inside there. Taste is superior to any store bought pita I've ever eaten (infact, I thought I didn't like pita bread. . .turns out I DO!) Thanks!

Delicious! I used cherries, macerated with vanilla and sugar and 4 whole eggs (because I didn't want to figure out what to do with the extra egg white) and almond milk. It's plenty sweet, you could easily back off the sugar. Nice recipe!

Cranberry Pumpkin Muffins

I used 2 tsp spice (blend of cinnamon, ginger, nutmeg and allspice) 1 heaping cup sugar (3/4 c. drk brown sugar, white sugar heaped on top) 15 oz. can pumpkin, 1/2 c. sunflower oil and fresh blueberries. Moist and beautiful! Thank you!

Crustless Cranberry Pie

So simple and so delicious!! I followed the recipe exactly, except I used vanilla extract, instead of almond extract. . . Tis gone. Tomorrow I am going to bake it in my cast iron skillet. Pre-heat the skillet and melt 1/4 c. butter in the skillet before adding the dough (for it is more a dough than a batter, very thick, just spread it over your prepared pan). So, so good!! I'm sure the struessel is good, but as it this is a stellar recipe. Thanks!! UPDATE; Something I discovered by accident, if you first coat the cranberries in the sugar and then mix it all up, the sweet is right next to the tangy :) It also DID work in my skillet, only I used 1/3 c. in the batter and the remaining butter in the pan and I like it baked a little longer in the skillet for a true cookie crunch! :)

Chocolate Bundt Cake

This disappeared in record time. Everyone ate dessert first. I only had a box of sf/ff cheesecake instant pudding, so I upped the cocoa to 1/2 c., added an egg and used coffee instead of water. The chili was good too, but obviously came in second to chocolate cake.

Mexican Whole Wheat Flour Tortillas

I made these last year. Loved them. Started making all our bread and got "off" tortillas. Bought a pkg. from the store. . .tasteless. . .Made these again today. Not buying them anymore. These have a great taste and they're really not all that hard to make. I don't use a press. I prefer them rolled very thin (they puff up when they "bake" on the griddle). Very good recipe! Thank you! You could add more flavor to your tortillas, if you wish, by adding onion powder, garlic, etc. I didn't even need to flour my counter today, so none of that "burnt flour" taste on them.

Zucchini Gingerbread

I was excited about this recipe too. I love gingerbread. I replaced the oil with pumpkin. I added 3/4 c. currants (because I needed to use them) and when I got to my zucchini (thawed and drained) there wasn't quite 2 1/2 cups so I filled in with grated carrot. I'll make this often! Pollo Oaxaca

Soo very good!! I couldn't find Oaxacan cheese, so had to use Jack, maybe added a touch more garlic. Will make many times! Thanks Avon. Looking forward to leftovers. Delicious!!! UPDATE! I have since found Oaxacan cheese at our little Mexican market. I like it better than the Jack if you can find it!

Alder Wood-Smoked Acorn Squash Soup

This was really good! I only used one squash, but didn't scrimp on the bacon, using 4 slices (Applewood Smoked) I also added some onion powder, and was also generous with the fresh parsley. I'll bet the bowl I have left over is even better tomorrow. If I make it again, I'll add more spices.

Quite tasty! I used parchment paper and baked on a cookie sheet. The dough was very stiff and hard to incorporate all the flour, but I resisted the urge to add anything. I rolled it between two layers of parchment, directly onto the cookie sheet. We don't care for candied citron so I added 1/2 c. raisins and no nuts. I made a vanilla glaze and applied it while still warm. Great with my morning coffee.
