Annie's Fruit Salsa and Cinnamon Chips

I used nectarines, kiwi, and strawberries. With all citrus fruit, I wouldn't have to worry about browning. I only used my favorite raspberry preserves. Not very sweet, but that may depend on your fruit. I think I would prefer a much richer base, like adding raspberry pie filling, but this way it makes it a light dessert. Now with the chips: If the chips aren't good, nothing is good! Ladies, this is when you want to use your convection function on your oven if you have one! I convection baked at 350 for 7 min, turned, and 4 min. max! You don't want to over-bake as well as under-bake. I noticed if the chip is crispy around the edges, but slightly soft in the center, it WILL harden up later. The sugars harden and it turns out nicely. I sprayed both sides of a whole bag of small 12 tortillas, and stacked them and cut them with a pizza cutter. Then threw them all in a bag filled with 1C sugar and 1T cinnamon. It coated evenly and everyone was happy with it.

Winter Leek and Potato Soup

I was actually looking for a pepper jack chicken soup, but thought this would do. Very good. I did do 1/2 cheddar 1/2 pepper jack to get the taste I was looking for. Didn't have leeks so used more onion. Four cloves fresh garlic. I threw in a half bag of frozen corn as well. Used heavy whipping cream. Loved it!

Chicken, Feta Cheese, and Sun-Dried Tomato Wraps

I rated this 4 stars because I'm being picky. It was fabulous on fresh cooked tortillas...but I couldn't find the non-vinegrette dressing. A bit too tangy for me, though I loved the sun-dried tomato zesty bite. It was a refreshing new item for dinner!

Black Forest Dump Cake I

I loved everything BUT the pineapple in this. It didn't blend in with the other flavors. Texture and acidity was just wrong with the pineapple. I used the "cook" kind of pudding and it set up great.

Boilermaker Tailgate Chili

I have to do five stars because all four of my kids (age 5-14) loved it and went back for seconds!! This makes quite a lot, but all the better for a meal tonight and the second in the freezer--if it lasts that long. I used smoked paprika, and didn't have bacon bits so splashed a bit of liquid smoke. Didn't add spicy ingredients because I'm feeding children. (No cayenne, no spicy sauce chili beans just reg) Very nice! Didn't add sugar, but chopped one Bosc pear and can of corn for sweetness. Yum!

Chocolate Banana Cake

Outstanding if you like bananas! I read reviews and increased mashed bananas to 1 1/2c and oil to 1/2c. Whipped it well in the blender. Very nice and fluffy, flavorful cake!

Condensed Milk Chocolate Frosting

Very good! I made as written except added 3/4c milk chocolate chips, fearful it wouldn't set up as reviews said. Rich, decedent. My family LOVED it! It went on top of banana chocolate cake. I've been looking for a fudge frosting, and this is perfect! It was pretty sweet, so maybe I'd add 4 squares(4oz total) unsweetened chocolate baking bars instead of the sweetened chocolate chips. Yum yum!

Flan II

I chose this recipe because I could easily substitute the ingredients for a healthier version. I doubled the recipe and used 11 packets truvia and unsweetened vanilla almond milk instead of sugar and milk. . Very nice! Of course it would be wonderful with cream or half n half (and if you are on the "belly fat diet" I guess that would be ok) I used my own sugar free maple syrup instead of melted sugar and it was nice. Next I'll try melting truvia to see what happens. Basic flan that helps the dieter get by with sweetness and protein.

Orange Tapioca Salad

I rated this four stars due to flavor. The texture was messed up on my behalf. I used the minute tapioca instead of the instant. It set up WAY too good. Very stiff. Like eating paste. My fault. I'm planning on trying again.

Incredible for that sweet tooth! Loved it just as written, except for m&ms instead (which made it fun as a dip). This would also be great for making homemade cookie dough ice cream! Authentic cookie dough flavor. Yum!!!

Big Germans

Awesome awesome! I've used a couple other German pancake recipes on this site and was not getting the puffy results I wanted. This is the one that worked, and my entire family loved it! Since I love sweet, I added a tablespoon of honey. Instead of the lemon glaze, I used a yummy sauce that consisted of butter, brown sugar, cinnamon, and cream. Oh yum!

Oven Roasted Teriyaki Chicken

I didn't care for the overpowering PB taste, but was using the all natural "Adams" brand ( isn't that why we try these recipes anyway? To be all natural/healthy?!) I like this idea, though, because of the endless possibilities. My bars never set up as I'd like, but I was using really expensive refrigerated dates. I'll try adding more coconut (because that awesome fruit needs to be tasted) and cocoa. Why not, I'll throw in some rice crispies like someone suggested as well.

Super Easy Rosemary Bread Machine Bread

Slow Cooker Tapioca Pudding

Very good concept. I love not having to presoak the pearls. I cooked on low for six hours, added salt, vanilla, and rum flavoring. I 1 1/2 the recipe. Taste was fabulous, but just didn't like the eggs bits in there ( note I attempted to avoid this by mixing all the ingredients thoroughly beforehand). Next time I'll leave out the eggs at first, then temper them in at the end to prevent the bits. Can be a richer pudding by using half n half instead of milk :)

Hungarian Mushroom Soup

I love mushrooms so I tried this recipe. I'm on a health kick so I also substituted the milk for soy milk, plain greek yogurt for sour cream, and used smoked paprika and reduced parsley to 1-2T chopped fresh. I liked it. I wondered why there wasn't any garlic! Very flavorful (though I will use garlic next time) and rich! The fresh parsley is nice to brighten up the flavor.
