Banana Sour Cream Bread

Very very good. Whole family loved it. I added a cup of mini semisweet chips. Excellent! I needed to cook it longer, about 70 minutes because of my oven.

I didn't care for the overpowering PB taste, but was using the all natural "Adams" brand ( isn't that why we try these recipes anyway? To be all natural/healthy?!) I like this idea, though, because of the endless possibilities. My bars never set up as I'd like, but I was using really expensive refrigerated dates. I'll try adding more coconut (because that awesome fruit needs to be tasted) and cocoa. Why not, I'll throw in some rice crispies like someone suggested as well.

Super Easy Rosemary Bread Machine Bread

Thought it a bit dry for my taste, so the day after I used it for toast. Very good! It slices very well. I'll try cooking it on a shorter bread machine cycle next time.

Maple Glazed Turkey Roast

I enjoyed this recipe in a crockpot. The only criticism I have is that you shouldn't make gravy with the drippings. WAY too sweet for gravy!

Slow Cooker Tapioca Pudding

Very good concept. I love not having to presoak the pearls. I cooked on low for six hours, added salt, vanilla, and rum flavoring. I 1 1/2 the recipe. Taste was fabulous, but just didn't like the eggs bits in there ( note I attempted to avoid this by mixing all the ingredients thoroughly beforehand). Next time I'll leave out the eggs at first, then temper them in at the end to prevent the bits. Can be a richer pudding by using half n half instead of milk :)

Hungarian Mushroom Soup

I love mushrooms so I tried this recipe. I'm on a health kick so I also substituted the milk for soy milk, plain greek yogurt for sour cream, and used smoked paprika and reduced parsley to 1-2T chopped fresh. I liked it. I wondered why there wasn't any garlic! Very flavorful (though I will use garlic next time) and rich! The fresh parsley is nice to brighten up the flavor.

Chocolate Banana Cake

Outstanding if you like bananas! I read reviews and increased mashed bananas to 1 1/2c and oil to 1/2c. Whipped it well in the blender. Very nice and fluffy, flavorful cake!

Pumpkin Crumb Cake

I doubled the pumpkin filling part, did pumpkin pie spice instead, and added extra cinnamon. It's hard to over spice pumpkin filling. It was perfect. Loved the crumb topping! I'm just not sure about the crust. It's just like a burnt cake at the bottom. I think I'd appreciate more of a crumb-like bottom as well. it does get soggy the next day, so serve immediately with some nice whipped cream.

Condensed Milk Chocolate Frosting

Very good! I made as written except added 3/4c milk chocolate chips, fearful it wouldn't set up as reviews said. Rich, decedent. My family LOVED it! It went on top of banana chocolate cake. I've been looking for a fudge frosting, and this is perfect! It was pretty sweet, so maybe I'd add 4 squares(4oz total) unsweetened chocolate baking bars instead of the sweetened chocolate chips. Yum yum!

I chose this recipe because I could easily substitute the ingredients for a healthier version. I doubled the recipe and used 11 packets truvia and unsweetened vanilla almond milk instead of sugar and milk. . Very nice! Of course it would be wonderful with cream or half n half (and if you are on the "belly fat diet" I guess that would be ok) I used my own sugar free maple syrup instead of melted sugar and it was nice. Next I'll try melting truvia to see what happens. Basic flan that helps the dieter get by with sweetness and protein.

Annie's Fruit Salsa and Cinnamon Chips

I used nectarines, kiwi, and strawberries. With all citrus fruit, I wouldn't have to worry about browning. I only used my favorite raspberry preserves. Not very sweet, but that may depend on your fruit. I think I would prefer a much richer base, like adding raspberry pie filling, but this way it makes it a light dessert. Now with the chips: If the chips aren't good, nothing is good! Ladies, this is when you want to use your convection function on your oven if you have one! I convection baked at 350 for 7 min, turned, and 4 min. max! You don't want to over-bake as well as under-bake. I noticed if the chip is crispy around the edges, but slightly soft in the center, it WILL harden up later. The sugars harden and it turns out nicely. I sprayed both sides of a whole bag of small 12 tortillas, and stacked them and cut them with a pizza cutter. Then threw them all in a bag filled with 1C sugar and 1T cinnamon. It coated evenly and everyone was happy with it.

Nacho Cheese Sauce

Very good. I used piggly wiggly brand with much more success! A shake of jalapeno powder added depth to it, but I could still serve it to my kids. I can imagine you would save $ doing this, rather than buying cheese whiz or velveeta. I added ground beef cooked with taco seasoning to make a meal. A keeper!

Ukrainian Apple Cake (Yabluchnyk)

You have to understand that Europe does not make their desserts as sweet as the US. This was excellent. I tripled the recipe and placed it in a jellyroll pan to feed the masses. I did not deviate at all from the recipe. It was beautiful and delicious! The bottom was cake-like, but hinted taste like a butter cookie. The streusel appeared more like a glaze (which actually was beautiful and gooey-licious). I decided to bake it at 350 until the apples were done, which ended up being about 70 minutes in my oven. Hope this helps :)

Pastry Cream

I've been searching for a bavarian-type cream for years! I'm so glad I found this recipe to use for fruit tarts! I used a double boiler (a pot of water with a big bowl over it) because I wanted to be sure not to curdle the egg. I usually do even if I temper it) Plus I used only egg yolks (so that would equal 4 egg yolks total) Added vanilla and almond at the end. Beautiful! I put it in the fridge and tasted it the next day. It was very thick and a perfect combination of flavors! If anything I'd scalle it back an egg yolk to thin it slightly. Keeping this forever!

Orange Tapioca Salad

I rated this four stars due to flavor. The texture was messed up on my behalf. I used the minute tapioca instead of the instant. It set up WAY too good. Very stiff. Like eating paste. My fault. I'm planning on trying again.

Cream of Cauliflower and Stilton Soup

I think it really depends how salty the bleu cheese is, because mine was too sharp to add the salt. (the stilton wasn't available were I live, so I used a creamy danish type) I recommend waiting to spice as indicated in the directions. I had to keep adding milk and cream to mellow the flavor as I did not have more cauliflower. I also used white wine because I didn't have Sherry. One thing I definitely would do again in this recipe is to add potato flakes to the puree. I didn't have a fresh potato, and it worked rather well-without the extra work. I found this recipe to be fun. Don't bother chopping everything fine because you're going to blend it all up! I liked it.

Banana Cake VI

This is actually REALLY GOOD! I did bake it at 275, which sounded wierd, but it was awesome! I did bake it in a jelly roll pan (to cut down on bake time, and for a greater frosting ratio) Two days later, still great and moist! The frosting is the exact recipe I use for my cinnamon rolls! Love this!
