Grilled Rock Lobster Tails

Had a chance to try this out on my Weber performer today. It was absolutely delicious!!! My lobster tail was gigantic so splitting it length wise was a must. I grilled it for about 2-3 minutes flesh side down, 2 minutes shell side then I let it sit for about 4-5 minutes in indirect heat with the kettles lid on. Searing any type of meat for 2-3 minutes per side then letting it cook in indirect heat is always a recipe for success. *basting is key here. Beware of the flames after 60 seconds, keep a water bottle on hand to help control flares. Enjoy.

Broiled Lobster Tails

Tried this recipe but my lobsters were a little large so the top half was perfect yet the bottom half was not fully cooked. For larger lobsters, broil the underside(still having the lobster tail in the shell with the meat pulled out) for a few mins. then follow the recipe...

Cajun Chicken and Sausage Gumbo

Tried this recipe today and this definitely hit the spot. I added jumbo shrimp in at the final 6 minutes and it was great.... Had to add more Cajun/old bay/cayenne along with the creole seasonings to kick this up a notch but the base is very well balanced.

Kosher Salt Encrusted Prime Rib Roast

I rubbed my 8.2lb roast with evoo then added season salt, fresh garlic, rosemary, peppercorn. Seared my meat @ 500 for 15 mins and brought the temp. down to 210. I did everything else the same way. It came out so juicy, it was amzing. I have made prime rib every year for 8 years now during Thanksgiving and this time it was the best.
