Creamy Chicken Enchiladas Verde

This recipe was AWESOME! We will definitely make it again :) The only thing I did differently was shred my own cheese from bricks (mix of jack and cheddar) and I seasoned 3 chicken breasts with homemade fajita seasoning (though, you could use store bought), pan seared them for 3 minutes per side, put a tight fitting lid and removed from heat for 20 mins. I shredded the chicken in a bowl with 2 forks and poured the pan juices over top. I wiped the pan and used that for the onions and, ultimately, the mixture for the insides of the enchiladas. I also cut the tortillas down to 6. We have 2 adults and 2 kids in the family. This was enough for 2 full dinners. I served it with Cuban inspired black beans, Vigo yellow rice, and an ensalata garnish. Also, I assumed tomatillo salsa and salsa verde were equivalent because I used Pace's salsa verde.

Chocolate Bar Fondue

Easy & delicious! I deviated and cut this recipe in half since we were serving 8. I used half dark chocolate (60% cacao) and 1/2 milk chocolate. I used coffee instead of water and omitted the instant coffee. I also omitted the sugar. The best dippers seemed to be mini pretzels! Other dippers included under ripe bananas, strawberries, marshmallows, biscotti and graham crackers. I will edit then I try the suggestion to use the leftovers to make truffles :)

Homemade Black Bean Veggie Burgers

We have recently started eating more veggie meals and I had high hopes for this recipe. It had flavor but too much cumin for my taste. My son (8 yr old vegetarian) loved it. My 6 year old daughter and husband did not care for it at all. I will probably make this and freeze them for my son when I cook meat dishes.

Best Lemonade Ever

Made this for company for Independence Day 2010. I halved the recipe but followed it to the letter. It was amazing! :) THANKS! I also used sugar cane as a garnish. Totally could have done without the garnish LOL

Good Old Fashioned Pancakes

Good batter but I did what others suggested and sifted the flour, reduced the salt (did 3/4 tsp) and added 1tsp vanilla. I also tossed in 1 chopped banana, 3 handfuls of fresh blueberries and 1 cup of finely chopped pecans. They didn't even need syrup in my opinion! The only reason for a 4 star instead of a 5 star rating was the suggested deviation.

Cogy's World Famous Matzo Balls

Just had these last night for an early sedar. They were a HIT with homemade chicken broth! I may jazz them up with a few more spices, aromatics or schmaltz instead of oil next time for a twist :) These were very simple to make. I doubled the recipe which made way too much (2 large balls per person... 8 people) so half the dough is still in the fridge.

No-Noodle Zucchini Lasagna

This was fantastic! I did not miss the pasta in this at all. I halved the recipe, cut out the meat, used dried herbs instead of fresh (so less than was called for due tot he concentrated flavors in dried) and egg white instead of egg. I also separated dish for baking into 4 mini loaf pans and cut the covered baking from 45 mins to 30 mins. The 15 mins uncovered stayed as is.
