Chocolate Eclair Dessert

I have made this recipe a ton now. I've tried lots of different icings. I like using the chocolate cool whip icing in the freezer section currently. I think the sugary frostings are too much sometimes and too heavy.

Easy Swedish Pancakes

I'm no swede but these are as good as it gets at our house. My hubby makes them and he seems to like them. I like thinner swedish pancakes but these are good.

Chocolate Chip Muffins

I used the 1 C milk, 1/2 C oil, 1 C chips, and 2 tsp vanilla. Wish I had sour cream (next time!). I filled 12 cups easily and quite full. The muffins rose beautifully. I didn't add the sugar topping this time. I will try that next time.

Loved the recipe! Didn't use salt - enough on the sunflower seeds. I used ground flax seed meal - could I use flax seeds next time? Only took mine 40 min to brown. I put parchment paper on my baking sheet to eliminate another dirty pan. Yeah!

Ice Cream Sandwich Desserts

Easy, quick dessert! I used the suggested hot fudge and carmel toppings, but sprinkled my dessert with crushed snicker bars. Freeze a bag of mini snicker bars, then crush them however you can. I use a hammer! Enjoy!

Split Pea and Ham Soup II

Easy soup for first time soup cooks (I'm under 30 yrs. old)! One change - I bought split peas with a seasoning packet. I didn't add the pepper to this recipe. I followed the ham bone directions - really easy. Instead of simmering the onion, garlic and pepper/seasoning for an hour separately, I put them in with the peas and carrots and simmered the soup for two hours! The soup ended up fabulous! I added garlic bread for dipping. My hubby loved it - we have tons of leftovers too.
