Spanish Flan

I give this 2 1/2 stars. It was pretty easy to make and I had no problems melting the sugar-- I added a tablespoon of water and turned the heat down very low. I covered with tinfoil and made a very shallow water bath (in a cookie pan), but it still baked well, no cracks. It took about 30 minutes longer than the baking time, and like some others have mentioned, there is way too much caramel glaze. I didn't hate it, but I didn't love it, and overall I will probably not make this again.

Perfect biscuits! The only change I made was substituting butter instead of shortening. I also brushed melted butter on before and after baking, and they turned out wonderful!

Chicken and Dumplings III

These were only okay. Like some other reviewers said, there was not enough broth, and the onions burned and stuck to the bottom. It was still edible and the dumplings were good, but I would not make this again.

Country Pound Cake

This was very good, although not amazing. I followed the recipe exactly. It baked perfectly and turned out very pretty! I mixed 1/2 c. white sugar and 2 Tbsp. milk to drizzle over the top. It looked great, but tasted a bit floury. I didn't love it, but my boyfriend devoured it! It actually tasted better the next day. I will use this recipe again, but I'm still on the lookout for the perfect pound cake recipe!

Shortbread Cookies II

This is exactly what I was looking for-- a classic shortbread recipe (1 part sugar, 2 parts butter, 3 parts flour). They turned out wonderful! I halved the recipe, but otherwise followed it exactly. I ended up with 3 dozen small cookies-- one batch plain, the other two with sprinkles. (Put the sprinkles on before baking so they stick!) I'm not sure what went wrong for the negative reviewers, but my cookies tasted great, even right out of the oven-- not at all crumbly or sand-like as some claimed. I don't have a cookie press, so I rolled the dough into 3 logs and froze for 30 min so I could slice 1/4" cookies (if you do this make sure to use a sharp cutting knife, a butter knife won't work). Bottom line: These were the perfect and simple shortbread cookies I wanted. Will definitely use again!

Cindy's Pumpkin Pie

This was delicious! I used french vanilla ice cream and melted it in the microwave before mixing and it turned out great. Since I made two pies I stirred one, and left the other alone to see if it made a difference-- DO NOT STIR! If you melt the ice cream and mix it thoroughly, stirring will only mess up your pie. The one I left untouched turned out perfect, no separation at all. The slight changes I made were: 1/2 c. white sugar and 1/4 c. brown sugar, and I used 1/2 tsp. pumpkin spice (in addition to the 1 tsp cinnamon) instead of the ginger and nutmeg. I used two store bought pie shells, though next time I'll be making my own, those were too bland. Be sure to cover your pie in tinfoil and it will turn out great! Will definitely use again.
