Oven-Baked Chicken

We just finished dinner and I must say this was terrific! From door to dinner table just just over an hour. The coating was crispy and the meat was tender and juicy. I also used split breasts and cut those in half as well. I stayed with the temperature and mine was done in 55 min. No way could you substitute pancake mix - Bisquick is a baking mix. Also pay attention to placing the coated chicken in hot melted butter in a hot pan - it will sizzle. You can't go wrong if you follow the directions as given.

Simply Traditional Lasagna

I suggest you give this a try! My daughter made this for our Christmas eve family dinner and it was a BIG hit, even with the pickiest eater! I can see where individual tastes might adjust the meat quantity or type of sausage but this appealed to everybody and now replaces the 4-hr prep lasagna of old, and the fact that you use regular lasagna noodles without precooking makes this a total winner of 5 stars with us. I also appreciated the review suggestion of using spinach in the marinara sauce.

Vegetable Curry

Agree this is a great starter recipe with so many possible variations. Some type of liquid is definitely needed in order to simmer the vegetables. Liked the suggestions of tomato paste and creme fraiche. I substituted thick chunks of yellow squash for the potatoes but may use potatoes another time. Didn't realize I had no turmeric on hand until I had the preparation well underway. I omitted the salt(because I used chicken broth)and pepper(reviewer's tip)and even with these omissions we thought it was very good. Since I didn't use potatoes I didn't see the need to pre-cook the vegetables so my cooking time was still only about 20-25 minutes. Glad I saw this recipe and thanks for the previous reviews - will definitely be making this again and again.

Baked Corn I

I had decided at the last minute to find a recipe that resembled "Mexican corn pudding" served at one of our favorite restaurants and thought this sounded close enough (not corn bread to be eaten with fingers). My adjustments were to reduce butter to 1/4 cup, add 1/4 cup white sugar, and reduce the sour cream to 1/3 cup (because that's all I had on hand!) I baked in a 8x8 pan for 45 min and it turned out just like I expected. Great side dish!

Slow Cooker London Broil

Omigosh! With all those good reviews, I thought how could this go wrong, but there must be a BIG difference between "London Broil" and "flank steak" cuts of meat. This recipe using London Broil was dry, tough and stringy - even though I followed the directions to a "T". My friend's mom, a veteran cook, said this type of receipe would be best using a flank steak, which has some fat in it. She said a London Broil should only be ... marinated and broiled. Beware!

Irish Soda Bread

Terrific! Won raves at the luncheons I served it at for St. Paddy's Day! I did reduce the raisins to only one cup and the caraway seed to about one and one-half tsps but the taste is great! I will make this again and again!

Apple Walnut Bread Pudding

I am unfamiliar with making bread pudding, but most I have seen have had a creamy, soft texture. This recipe did not say to cover before baking and so the top became very hard and dry. Is this supposed to be stirred while baking? Also, as there are many varities of french bread, what kind of french bread is recommened? The recipe calls for apples chopped but the picture looks like they are sliced. If I were to make this again, I also think more pudding mixture is necessary, maybe using two large packages of pudding and a little more milk.

Cabbage Jambalaya

I decided to try this because Susan said her son liked it. I was looking for a homey, comfort recipe that included cabbage, and... wahla! I knew from the start there would not be enough water for 1 cup of rice, however I tried the recipe as written and wound up adding a can of broth and at least 2 cups more water! I also did not want all the meat listed so I used only 1 lb of ground turkey and seasoned it highly with cajun spice and garlic pepper. Not appealing visually, but this tastes REALLY GOOD witha touch of hot sauce added. Have french bread on the side. I would recommend this.

Artichoke Spinach Lasagna

After reading the previous reviews I KNEW this was going to be a good one! This has replaced our old meat-sauce recipe. We thought it was a little too salty so next time will try low sodium broth. Also concerned it might turn out to be watery so I just simmered it a little longer with the lid off to reduce the broth. I like the idea of using the lasagne noodles that don't require pre-cooking--that will make preparation even easier. It was a hit!

Chile Relleno Casserole

I'm always on the lookout for quick and tasty recipes and this was both! I followed the directions exactly and my family found it tasted as good as "a restaurant dish" at an authenic Mexican restaurant. I served it with baked creamed corn and green salad for an excellent light supper.

Mean Woman Pasta

This was a hit with my family. With all the chopping I didn't think it was so quick, but consider it reasonable preparation time for a weeknight dinner. It was an easy recipe to follow and most of all, tasted great!
