No Bake Pumpkin Pie I
I just made this in the morning before work--that's how easy it is! It chilled in the fridge during the day and was ready for my husband's birthday dessert in the evening! He loves pumpkin pie, and this turned out perfectly. A fun tip: since we had people over, I bought a bunch of those mini graham cracker crusts so everyone could have their own little pie. With a bit of whipped cream and cinnamon on top of each, they looked so cute. This is a great, easy, tasty recipe!

Three Berry Pie
Good recipe. Definitely use more cornstarch though--I used a 1/4 cup plus sprinkled a sugar/cornstarch mixture on the bottom and it was still a bit soupy. I think I'll add some vanilla and cinnamon next time as well. All in all though, a wonderful summer pie!

Cold winter night? This is the perfect dinner! Here are a few modifications, but this is the kind of thing you can create to taste. Here's what made it perfect for me: used large can of crushed tomatoes with basil + 3 cans chicken broth and no water. Used red potatoes (2) and no celery or green beans. Also used both kidney and white beans -- and it looked gorgeous. I saw one review that added potatoes at the end because of a longer cooking time. I threw the potatoes in withthat carrots though atthe beginning and it was great. Near the end, also recommend adding a little olive oil to the pot just to add more depth and when serving, definitely top with a generous spoon of Parmesan. I served with Parmesan crescent rolls and it was a cozy monster hit!!!
