Deviled Chicken Breasts

Reviewed: Mar. 24, 2012
Very tasty. I followed the suggestions of other reviewers and used thyme instead of savory, dijon mustard and honey intead of honey mustard, and I added capers. I also added seasoned salt to the chicken prior to coating it w/ the bread crumbs. I served it with steamed broccoli. I will make this again.

Roasted Lemon Chicken

Reviewed: Nov. 25, 2011
I used this recipe, minus the lemon juice, to roast drumsticks. I didn't have a roaster so I used a shallow baking dish and rolled alumimun foil into cylinders to keep the chicken from touching the dish and allowing room for the drippings. I've never roasted anything..ever. This recipe is absolutely delicious.

Baked Spaghetti Squash with Beef and Veggies

Reviewed: Oct. 12, 2011
This was so good. I used ground turkey instead of beef and although the recipe did not state, I definitely seasoned the meat. I also added more herb seasoning...dill, thyme, etc. prior to putting it in the oven to bake. This was good and I will make it again. Maybe I'll add capers. Yum!

Split Pea Soup with Rosemary

Reviewed: Jan. 25, 2011
OMG! Sooooo delicious. I used 2 cans of roasted garlic chicken broth and then added 2 cups of water (I did't want to use my last can of broth) as well a a packet of chicken bouillon. I also added other herbs (dried): dill, cilantro and parsley as well as the rosemary. Great! Does not even need salt or any other spice. This will be in heavy rotation.

Portuguese Chicken I

Reviewed: Jan. 16, 2011
This meal was delicious. I did make some adjustments. For starters I totally omitted the butter and used extra virgin olive oil to sear the chicken. I added the wine and chicken broth as directed to simmer. Once the chicken was cooked though, I removed the chicken from the pot and instead of adding heavy cream, I had none, I added a small amount of water mixed wtih cornstarch to thicken the sauce. The result was really good. I will definitely make this again.

Vanilla Granola

Reviewed: Jan. 4, 2011
I thought this was great. I never made granola before but, had no problem with this at all. I'm not really a nut type of person so, I substituted with raisins, coarse ground flaxseed, and sunflower seeds. I baked at 260 degrees, on the top oven shelf for three 15 minute intervals, stirring every 15 minutes. For the last 15 minutes I increased the oven temp to 275 and moved the baking pan to the lower level to brown. It was perfect as there was no burning at all. I will definitely make these again.

Peach Cobbler

Reviewed: Aug. 24, 2010
I am not a cook and have never made Peach Cobbler. However, this was amazing! I used 2 small 10 oz. jars of peaches, decreased the amount of ingredients to serve four and, eliminated the salt. I also discarded some of the butter and added olive oil in its place as well as sprinkled a bit of cinnamon on top before baking. This will now be my 'go to' dessert for office/house parties.

I was slightly skeptical but they came out fabulous and they taste just like fries.
