Parmesan Crusted Chicken

Reviewed: Nov. 7, 2011
Although I made some changes, I am rating this more for myself. I used miracle whip, personal preference. Also mixed in some garlic powder, pepper and dried basil. I then rolled the chicken pieces in the parmesan cheese. I left out the bread crumbs altogether. I had sliced the chicken breast into 4 pieces to have more coating so the cooking time was good for me. Very nice flavor, quick and easy. A keeper.

Fast Apple Rhubarb Pie

Reviewed: Apr. 13, 2003
I added about 1 tablespoon of cornstarch to the apples and rhubarb and it seemed to help thicken it a bit. Great flavour. I also made an oatmeal crumble topping for it. 1 c oatmeal 1/2 c marg and 1/2 c brown sugar (approx measurements)

Kowloon's Chinese Chicken Wings

Reviewed: Jul. 10, 2000
This recipe had way too much salt. I didn't use any and found that the soy sauce made it salty enough. Seemed to lack much flavour except for the soya sauce.

Amazing Asparagus

Reviewed: May 1, 2002
The rest of the non asparagus lovers loved this! I, who love the stuff, didn't care for it at all. Also I found a lb of bread far too much and only used about 1/2 called for. If I make it again I would slice the asparagus into 2-3inch pieces for easier scooping.

Beef and Barley Soup III

Reviewed: Jan. 7, 2002
A fantastic soup. I found that 3/4 c of barley made it very thick. I would cut it down next time to 1/2 to 2/3 c. The wine difinitely gives it a nice flavour.

Greek Pasta Salad

Reviewed: Aug. 22, 2002
I found this salad very bland. I even added feta and some oregano but still I found it rather tasteless. I would not make this again.

Flapper Pie I

Reviewed: Sep. 22, 2009
This pie was excellent! I added a tad more cornstarch as recommended by other users. Will make again. I am not even a cream pie lover! The almond in the meringue sets this off as special!

Overnight French Toast II

This is very easy to make but I found it very sweet. The bread comes out nice and moist. Maybe less sugar next time?

Nutty Lemon Coffee Cake

Reviewed: Apr. 2, 2009
I made this in a bundt pan and put the mixture in the center, carefully spooning the second batter over top. I did not want to use lemon extract so I used fresh squeezed lemon juice doubling the amount. It was a hit. I had also drizzled icing over it to give it some flare.

Sensational Salmon Loaf

Reviewed: Apr. 21, 2010
I felt this recipe had way to many crackers in it. Tasted a bit dry and bland. I would make it again and add an extra egg and 1/2 the crackers

Date Cookies

Reviewed: Jun. 4, 2008
I used half white and half brown sugar. I increased the spices a bit. I found that these were a bit dry but very tasty. They kept very well not like some cake recipes that tend to stick together as they are too moist.

I used low sugar molasses in place of the milk. Also added about 3/4 cup raisans. Excellent moist muffin.

Black Bean Chili

Reviewed: Apr. 2, 2010
Only a few minor changes. I doubled the chili powder and cumin. Used one can of black and one of red kidney beans. Also used a hot salsa and added about 1/2 cup chopped celery. Very nice change from the regular chili. I'd say enough for 3 but pushing it for 4 if anyone wanted seconds.

Tina's Best BBQ Lime Chicken

Reviewed: Jun. 14, 2001
The flavour of the chicken is fantastic! I used a whole chicken and butterflied it down the back. I have also used boneless skinless chicken breasts. The chicken is so tender! I will be using this over and over again. I had a 3 lb chicken and found half of the lime and oil was enough. Didn't cut down on the other ingredients though. I used bottled lime juice and it was just fine.

This salad had great flavour but I found it a little too oily. Would cut down on the oil a bit next time.

Christmas Brunch Casserole

I placed this recipe here several years ago. For some reason it was changed to state thawed hash browns. I never thaw the hash browns first but I always make the evening before, refrigerate and bake the next day.

Yummy Cheese Ball

Reviewed: Jan. 17, 2011
This is a very nice cheese ball. I only made 1/2 the recipe and it was plenty for an average size ball. I also used 3 green onions and used walnuts as that is what I had on hand. Yes pecans would be nicer.
