Garlic and Tomato Tilapia

Chicken Thigh Fricassee with Mushrooms and Rosemary

I left out the olives as I had none. Also I diluted 1/2 white wine and 1/2 water with a bit of cornstarch to get a bit of a sauce with some thickening.

Oatmeal Banana Raisin Coconut Cookies

Not quite a cake cookie, not quite a hard type cookie. A nice change and full of lots of good stuff! I mashed one of the bananas and sliced up the other. Time is just about right. I went about 12 1/2 minutes.

Shepherd's Pie Mexicana

I omitted the seasoning salt and doubled up on the taco seasoning. Added a few sprinkles of cayenne. Also used black beans instead of the peas and 1/2 the corn. I used sour cream in the potatoes instead of milk in keeping with the tex mex theme. Also grated some cheese on top of the potatoes.

Peanut Butter Cocoa No-Bake Cookies

I used 1/2 brown sugar and also boiled for 2 1/2 minutes. I added some mini marshmallows as well after it had cooled a bit. Got rave reviews!

Rhubarb Cake I

This was excellent! Very moist! I used no fat sour cream and used about 1/2 cup more rhubarb. Next time I would use a full 3 cups. Vanilla ice cream is great with this. Cooking time was right on.

I used half white and half brown sugar. I increased the spices a bit. I found that these were a bit dry but very tasty. They kept very well not like some cake recipes that tend to stick together as they are too moist.

Lemon Cake with Lemon Filling and Lemon Butter Frosting

This cake took a bit of time. The lemon curd was fantastic and lemony. Came out looking just like the pic. Recipe took almost 4 fresh lemons. I found the butter icing a bit sweet and would likely to try it with a cooked icing next time.

Coconut Meringues

These were great! I doubled the recipe as I had 4 egg whites to use up. Also doubled the amount of coconut after that. I used unsweetened coconut and they turned out perfectly. I used them as a second desert along with the lemon cake with lemon filling recipe on this site.

Pumpkin Cookies VI

This is an excellent cake cookie. Lot's of flavour. I added a bit more cinnamon but then I usually do when called for. I would add walnuts next time but didn't have them on hand.

Beef and Bean Pot

This is an excellent recipe. I wasn't sure I would care for it myself but I knew the others in the house would like it. Turned out I liked it too. It looked dry but was not. Not sure what was ment by Chili Beans, as I have always used Kidney beans in chili so I used a can of black beans.

Fast Apple Rhubarb Pie

I added about 1 tablespoon of cornstarch to the apples and rhubarb and it seemed to help thicken it a bit. Great flavour. I also made an oatmeal crumble topping for it. 1 c oatmeal 1/2 c marg and 1/2 c brown sugar (approx measurements)

Baja Stuffed Potatoes

When I went to the cupboard to get the corn, I was out so I used a can of kidney beans instead. I used just one can of green chillies. I also added 1/4 c finely chopped onions and 1/2 tsp cumin. Next time I will just mix it all into mashed potatos rather than going to the trouble to bake and stuff them. There is too much filling for the potatos anyway so there is extra left over.

Moroccan Chicken

1 can of chicken broth is plenty, otherwise it is too runny. I used low sodium chicken broth and left out the salt all together. Very tasty. Will make again! Double spices at the very least! I added some sliced mushrooms second time I made it. Great with couscous or potatoes. Company loved it!

Chocolate Pecan Pie III

I used my quiche pan to make this pie and it was the perfect size. I cooked it about 5 minutes longer. This is a great pie,excellent flavour, just the right amount of chocolate. Thanks Ruth for sharing!

Chicken Costa Brava

This was a very attractive dish. I used half the olives and found there were still plenty. The dish does have an unusual flavour but it is still very good. It would be a nice addition to a pot luck.

Chocolate Cherry Cake III

When I made this recipe I didn't use the icing. I thought it may be a bit to rich for my liking. I put whipped cream on the top drizzled with chocolate sauce. Took it to a pot luck and it got rave reviews.

Amazing Asparagus

The rest of the non asparagus lovers loved this! I, who love the stuff, didn't care for it at all. Also I found a lb of bread far too much and only used about 1/2 called for. If I make it again I would slice the asparagus into 2-3inch pieces for easier scooping.
