Veal Cutlet with Red Peppers

Nice tang. I let the cutlets marinate about 45 minutes. Also note, the recipe says to remove cutlets and discard marinade. SAVE IT! You add it later, of course mine was down the sink by then.

Garlic Feta Dip

Half the recipe is plenty! I still used 2 garlic cloves. Also used low gat yogurt, fat free sour cream and 25% less fat feta for a more healthy dip. I added 1/2 the salt but would leave it out totally next time. Cooked up kabobs of chicken and used some for basting and served the rest as a dipping sauce and served as an appetizer. Also made some baked pita chips and these were great with the dip as well.

Chipotle-Lime Chicken Skewers

I marinated the chicken about 1/2 hrs first The only other change I made was to use low fat miracle whip. Very nice and tangy. I think the cilantro is a must! I added a bit of water and heated the extra marinate, served with basmati rice and poured sauce over it.

Black Bean Hummus

I gave this a 5 star with the following changes. I used 3 garlic cloves, doubled the cayenne and paprika as I like more of a nip. Colour is rather non appealing though, rather a grey purple colour not like the picture.

Italian Sausage, Peppers, and Onions

I found I needed more wine than called for. Overall a good basic dish. I did not at tomatoes or sauce as other suggested as I was looking for something without a tomato base. I did add about 1/4tsp. of dried chili peppers. Next time I would add more as I like some kick. Used fresh basil as I had some in the garden and I cut up the sausages and served all over mashed potatoes

Company Couscous

I used chicken broth in place of the water. I gave this a 3 rating as I found it dry. I added about 2 more tablespoons of olive oil and that helped a bit. I cut the basil in half as I too felt 1 c would be too much. Next time I will add about 2-3 tablespoons of oil before it goes into the oven.

Deliciously Sweet Salad with Maple, Nuts, Seeds, Blueberries, and Goat Cheese

This was a wonderful dressing. The mix of nuts, seeds and berries along with the dried cranberries is perfect. I used red leaf lettuce mixed with iceburg. The goat cheese I spluged for was not what I wanted. It was like a brie but the cheese was so soft inside it was runny so that was dissapointing. I managed to cut some up and dump it in the salad along with the feta.

Herb Roasted Chicken and Vegetables

I did not care for the oregano in this recipe. I think the tarragon would have been a better choice. I fried up some onion and mushrooms and added them along with some garlic powder as well. Cooked one hour and used boneless chicken breast and thighs and chicken was perfect. I will try this again with about 1 tsp of tarragon instead of the oregano

Deep Dark Old Recipe Bran Muffins

I made a few changes. I used fat free sour cream instead of buttermilk, found them a dryer than I expected, this may be the reason I used brown sugar instead of white. Also used dates and walnuts, no raisans.

Sensational Salmon Loaf

Blackened Chicken

Oatmeal Raisin Toffee Cookies

A very nice cookie. Unfortunately my toffee chips were old and I did not realize it and they gave the cookies a very bad taste. I had to discard the whole bunch! So make sure to smell the toffee pieces first and don't add if they smell the least bit off! I will try this recipe again with fresh toffee pieces!

Oatmeal Raisin Cookies IV

Very nice cookie. One teaspoon of baking powder is plenty when you have 3 eggs. I did increase the cinnamon a bit as I always do. Mine did not fall flat at all but if you find that your cookies are falling too flat on your first batch, add a couple of tablespoons of flour to the remaining batter.

Black Bean Chili

Only a few minor changes. I doubled the chili powder and cumin. Used one can of black and one of red kidney beans. Also used a hot salsa and added about 1/2 cup chopped celery. Very nice change from the regular chili. I'd say enough for 3 but pushing it for 4 if anyone wanted seconds.

Pork and Cabbage Soup

I used Jimmy Dean low fat pork sausage. I think you need to use the regular sausage for the flavour of the fat. I did not have a can of beef broth and used 3 packets of bouillon granules and adjusted the water accordingly. I heated everything to a boil then dumped it all in a crockpot to simmer for 6 hrs. I also added a carrot for colour. I like my soup with a bit more zip and added a dash tabasco sauce to my bowl. Over all, a nice hearty soup.

Jambalasta

Just a few changes. I wanted more vegies so added a grey and a yellow zucchini and some mushrooms. I used 1/2 the recipe and it will feed 3-4. I used fresh garlic. Substituded 8 on can tomato sauce with a 1/2 fresh tomato as I didn't want to open a large can of tomatoes. I would like it a bit spicier.

Flapper Pie I

This pie was excellent! I added a tad more cornstarch as recommended by other users. Will make again. I am not even a cream pie lover! The almond in the meringue sets this off as special!

Banana Walnut Cornbread

Made just a few minor changes. Used an egg as recommended. Also used white flour. Baked 50 min in a loaf pan. Sliced up without problems. I like the less sweet taste of this loaf. When making it again I would add a bit of salt to the recipe and try the whole wheat flour.
