Tomato Basil Couscous Salad

This was nice but I found it just a bit vinegary and maybe a bit too moist. Next time I will cut down on the vinegar and add a bit more couscous to broth

No Bake Lemon Cheesecake

This was lovely and light. I broke my cheesecake pan so just used a 9x12 pan. Served with some fresh blueberries. Best the day it is made. I am going to try this again with other varieties of Jello. Maybe a mango?

Farm Macaroons

This is the the macaroon recipe I have been searching for! Perfect for using those leftover egg whites. Next time I will increase the coconut by 1/2 cup to try to get that "haystack" look. Mine rounded out more like a cookie.

These are very much like a shortbread cookie. I really like the addition of the jam. Very nice for a Christmas tray and keep well in fridge. They will be a regular Christmas cookie for me. I used the end of a wooden spoon to make the indent and cupped the dough in my palm. I found that worked very well.

Beer Dip I

I did not care for this dip. I am glad I only made 1/2 the recipe. I found it way too salty. Not much was eaten either so it wasn't just me. I also added quite a bit of extra beer to try to get the saltiness out but it didn't help.

Yummy Cheese Ball

This is a very nice cheese ball. I only made 1/2 the recipe and it was plenty for an average size ball. I also used 3 green onions and used walnuts as that is what I had on hand. Yes pecans would be nicer.

Christmas Brunch Casserole

I placed this recipe here several years ago. For some reason it was changed to state thawed hash browns. I never thaw the hash browns first but I always make the evening before, refrigerate and bake the next day.

Cheesy Catfish Chowder

I only had about 3/4 lb catfish and I felt it was plenty. I very nice chowder recipe. Not too heavy. I might try adding some corn next time or maybe a bit of curry. Update. Made this again, actually forgot I had made it before until went to review! Used 1/2 tsp curry and it was lovely. Also left out the water and used two packets of boulion with 1 c water. Only used 1/4 c regular flour.

Cherry Walnut Balls

I made these smaller and used just 1/2 a cherry in each. Although I mixed as stated I found I had to work quickly with the mixture still quite warm to get it to mold around the cherry. Even with doing this the mixture cooled and I had a fair bit stuck to the bottom of the pan.

Cranberry Orange Cookies

These cookies are amazing! I used frozen cranberries. Cutting was easier. I love the tart of the berries and sweetness of the icing. Nice hint of orange. These will be a regular christmas cookie from now on.

Corn Fritters

I made 1/2 of this recipe and it was plenty for the two of us to replace our potatoes. I dropped by the tablespoon cooking two at a time for about 3 minutes turning to brown. I left the sugar the same as some reviewers suggested it needed more sugar. Next time I will reduce the sugar as well. Plenty sweet enough for us.

Cheese Puff Appetizers

Taco Casserole

for my taste, 5 stars with the following changes. I omitted the canned tomatoes and taco chips. I only used cheddar cheese. Also added another half packet of taco seasoning as I had one on hand. I put about 3/4 c sour cream on top of mixture then topped all with cheese. This made it very similar to any hamburger/past casserole but with the mexican twist. I will make this again as a quick simple meal. Good for pot lucks too!

Volcano Pancake

This certainly was interesting to watch cook! I omitted the cheese and served with corn syrup or maple syrup. I think next time I will sprinkle with sugar and a bit of cinnamon to serve. Beware, this is quite eggy but I liked this about it. Eat right away as it goes flat fast! I wonder what this would be like baked in muffin cups? You could then "fill" them with sausage, ham or whatever when they come out of the oven! Nice for a buffet!

Curried Butternut Squash and Pear Soup

This was a very nice soup. I did not roast squash but microwaved. Also was out of fresh ginger and used 1 tsp of powder. Plenty for 6 small bowls. I added just a pinch of white pepper and another of cayenne pepper to give it just a bit of a zip.

Linguine with Peppers and Sausage

I used honey/garlic sausage and of course increased the garlic cloves to 3. Also added about 1/2 tsp dried chili peppers to give it some tang. The white wine was a great change from the chicken broth I would normally use. This is a keeper!

Schweinebraten Pork Roast

I only gave this a 4 star as I agree with other reviewers and increased the spices. I used about 1 tsp of marjoram, about 1/4 c fresh basil and 3/4 tsp of garlic. I omitted the salt altogether. I also cooked in a crock pot on high for 4 hrs then made gravy with flour and a bit more beer. I loved the result. Great gravy. I will make this again.

WWII Oatmeal Molasses Cookies

I used 1/2 c white and 1/2 c brown sugar. I couldn't see these with all white. These cookies were okay. I found them a bit dry, nothing special. I may try them again with just the white sugar.
