Rosenmunnar

Reviewed: Jan. 17, 2011
These are very much like a shortbread cookie. I really like the addition of the jam. Very nice for a Christmas tray and keep well in fridge. They will be a regular Christmas cookie for me. I used the end of a wooden spoon to make the indent and cupped the dough in my palm. I found that worked very well.

Beer Dip I

Reviewed: Jan. 17, 2011
I did not care for this dip. I am glad I only made 1/2 the recipe. I found it way too salty. Not much was eaten either so it wasn't just me. I also added quite a bit of extra beer to try to get the saltiness out but it didn't help.

Yummy Cheese Ball

Reviewed: Jan. 17, 2011
This is a very nice cheese ball. I only made 1/2 the recipe and it was plenty for an average size ball. I also used 3 green onions and used walnuts as that is what I had on hand. Yes pecans would be nicer.

Cheesy Catfish Chowder

Reviewed: Jan. 17, 2011
I only had about 3/4 lb catfish and I felt it was plenty. I very nice chowder recipe. Not too heavy. I might try adding some corn next time or maybe a bit of curry. Update. Made this again, actually forgot I had made it before until went to review! Used 1/2 tsp curry and it was lovely. Also left out the water and used two packets of boulion with 1 c water. Only used 1/4 c regular flour.

Cherry Walnut Balls

Reviewed: Dec. 18, 2010
I made these smaller and used just 1/2 a cherry in each. Although I mixed as stated I found I had to work quickly with the mixture still quite warm to get it to mold around the cherry. Even with doing this the mixture cooled and I had a fair bit stuck to the bottom of the pan.

Cranberry Orange Cookies

Reviewed: Dec. 18, 2010
These cookies are amazing! I used frozen cranberries. Cutting was easier. I love the tart of the berries and sweetness of the icing. Nice hint of orange. These will be a regular christmas cookie from now on.

Corn Fritters

Reviewed: Nov. 29, 2010
I made 1/2 of this recipe and it was plenty for the two of us to replace our potatoes. I dropped by the tablespoon cooking two at a time for about 3 minutes turning to brown. I left the sugar the same as some reviewers suggested it needed more sugar. Next time I will reduce the sugar as well. Plenty sweet enough for us.

Cheese Puff Appetizers

Reviewed: Nov. 10, 2010
These fell flat. They looked like little alien space craft. I added just a touch of cayenne. Flavour was great and I got raves but not like pictured.

Taco Casserole

Reviewed: Oct. 23, 2010
for my taste, 5 stars with the following changes. I omitted the canned tomatoes and taco chips. I only used cheddar cheese. Also added another half packet of taco seasoning as I had one on hand. I put about 3/4 c sour cream on top of mixture then topped all with cheese. This made it very similar to any hamburger/past casserole but with the mexican twist. I will make this again as a quick simple meal. Good for pot lucks too!

Volcano Pancake

Reviewed: Oct. 23, 2010
This certainly was interesting to watch cook! I omitted the cheese and served with corn syrup or maple syrup. I think next time I will sprinkle with sugar and a bit of cinnamon to serve. Beware, this is quite eggy but I liked this about it. Eat right away as it goes flat fast! I wonder what this would be like baked in muffin cups? You could then "fill" them with sausage, ham or whatever when they come out of the oven! Nice for a buffet!

Curried Butternut Squash and Pear Soup

Reviewed: Oct. 20, 2010
This was a very nice soup. I did not roast squash but microwaved. Also was out of fresh ginger and used 1 tsp of powder. Plenty for 6 small bowls. I added just a pinch of white pepper and another of cayenne pepper to give it just a bit of a zip.

Linguine with Peppers and Sausage

Reviewed: Sep. 8, 2010
I used honey/garlic sausage and of course increased the garlic cloves to 3. Also added about 1/2 tsp dried chili peppers to give it some tang. The white wine was a great change from the chicken broth I would normally use. This is a keeper!

Schweinebraten Pork Roast

Reviewed: Sep. 6, 2010
I only gave this a 4 star as I agree with other reviewers and increased the spices. I used about 1 tsp of marjoram, about 1/4 c fresh basil and 3/4 tsp of garlic. I omitted the salt altogether. I also cooked in a crock pot on high for 4 hrs then made gravy with flour and a bit more beer. I loved the result. Great gravy. I will make this again.

WWII Oatmeal Molasses Cookies

Reviewed: Sep. 5, 2010
I used 1/2 c white and 1/2 c brown sugar. I couldn't see these with all white. These cookies were okay. I found them a bit dry, nothing special. I may try them again with just the white sugar.

Sour Cream Lemon Pie

Reviewed: Sep. 3, 2010
I cut down on the milk a bit so that I could add more lemon juice. This made it a bit harder to mix and bring to a boil as it was quite thick. Even after increasing the lemon juice to 1/3 cup and increasing the zest, I still wanted a bit more lemon flavour so added a drop or two of extract. That did it. For the women who had trouble with the "dumplings" try using a whisk while cooking. That should do the trick.

Herb-Stuffed Red Peppers

Reviewed: Aug. 19, 2010
I only made a few changes. I did not pre cook the peppers but roasted covered one hour. my allspice was old so I increased the amount some. Added a touch of garlic powder as well. I used regular rice as that is what I had. Very nice flavour.

Sundried Tomato Tapenade

Reviewed: Aug. 19, 2010
I really liked this tapenade. I made just 1/2 the recipe and it was plenty. A little goes a long way on a cracker. Also was nice on french bread. I was a little low on Feta but I do not think the flavour suffered too much. I used fresh basil as i had some on hand and just blended all in a mini food processor. Easy!

Summery Lime-Mango Shortcakes

Reviewed: Aug. 5, 2010
I only gave it 4 stars because there is enough in the shortcake batter for 12 but the actual recipe will only serve 6. I served 6 and could have used still more fruit and whipping cream. I went to the store for strawberries and of course they were out so substituted kiwi. I didn't have the poppy seeds but I think that would add. Not sure of the purpose of the gelatin. Wouldn't bother with it next time.

Tasty BBQ Corn on the Cob

Reviewed: Aug. 5, 2010
This is a very nice change from regular corn. The changes I made was to boil the corn for about 5 minutes. I then brushed with olive oil then spices. I just roasted on bbq as is for a couple of minutes and served!
