Broiled Tilapia Parmesan

Reviewed: Mar. 15, 2012
Although I used white fish they taste about the same. I did not care for this recipe. The topping did not crisp up and was rather soggy.

Graham Streusel Coffee Cake

Reviewed: Mar. 15, 2012
This worked as I needed to use up ingredients in the pantry. Other than that it was just okay. I used only 1/2 c butter as suggested. I figured if it was going to sink down I would just put it on top. I did this then inserted the spatula and swirled a bit then chopped into it a bit to push some down. Well it didn't sink at all so I now wish I had put some into the middle. There was so much on the top a lot fell off when it was cut. I think some finely chopped apple would be nice in this.

Oven Roasted Teriyaki Chicken

Reviewed: Mar. 11, 2012
Similar to something I have made myself for years. I used wings and boiled them in the sauce for a bit first then put them into the oven to crisp up.

Cookie Tulips

Reviewed: Mar. 9, 2012
Very easy and got rave reviews from the guests. Cookie stays just soft enough that it doesn't crumble. I used only 1 tbsp of batter and made about a 4 inch circle. I baked about 6 at a time and molded them over mini muffin tins. By the time the next batch was cooked I was able to remove them. This made a nice hand held dessert. I made two batches. For the second I omitted vanilla and added 1 tbsp Kahlua. These I topped with with a drizzle of chocolate syrup, yum! Also I used real whipping cream-1 1/2 cups whipped is the correct substitute for the cool whip. Update: I have made these 3 times now. Love them. Once I use blueberries and pushed the plup through a seive. They were great as well.

Golden Catfish Fillets

Reviewed: Mar. 2, 2012
The basics of the recipe are sound, it definitely needs more seasonings. I added more garlic powder. 1/2tsp paprika and 1/4 tsp cayenne. Next time I will double it!

Chili Taco Popcorn

Reviewed: Feb. 27, 2012
This is way too salty! Next time I will leave out the season salt altogether. I would also double the hot sauce.

Zesty Succotash

Reviewed: Feb. 27, 2012
I left out the peas. This was a very nice side dish. I used the leftover the next day. Added 3/4 lb cooked hamburger and 1/2 pack taco seasoning mix for a full meal. I think it needs a bit more hot sauce but I like things on the spicy side.

Best No-Bake Cheesecake

Reviewed: Feb. 14, 2012
This is a wonderful cheesecake. As some had problems with this setting I added another 1/2 package of cream cheese but it really didn't need it. I whipped up the whipped cream first, added the sugar to it then blended the beaten cheese and whipped cream together. Topped all with a can of cherry pie filling.

Banana Cake VI

Reviewed: Feb. 1, 2012
Gave this 4 stars as I would not make as written. I think the cooking temp is wrong. I baked 350F for 45 minutes. I did not put it in the freezer. Came out perfectly. I also substituted fat free sour cream for the buttermilk. Great with cream cheese frosting.

Grandma's Favorite Chicken

Reviewed: Jan. 24, 2012
I gave this 4 stars because it would be very bland with water. I used chicken broth. This is a very plain dish and perfect for my hubby who does not like "fancy stuff" Next time I make it I will try adding Cajun seasoning to give it some zio. I was out when I made this.

I give this 5 stars with changes. I used only 1/2 c and used Miracle Whip in place of mayo. I also used 4 cloves of garlic. Very easy to make.

Orange Pecan Cookies

Reviewed: Dec. 26, 2011
These are very nice cookies for Christmas. I made them into a crescent shape and dipped half in the chocolate. I used orange liqueur as well and added a bit to the chocolate. This was a mistake as it turned the chocolate hard. I added some oil and that thinned it out again and I was able to use.

Parmesan Crusted Chicken

Reviewed: Nov. 7, 2011
Although I made some changes, I am rating this more for myself. I used miracle whip, personal preference. Also mixed in some garlic powder, pepper and dried basil. I then rolled the chicken pieces in the parmesan cheese. I left out the bread crumbs altogether. I had sliced the chicken breast into 4 pieces to have more coating so the cooking time was good for me. Very nice flavor, quick and easy. A keeper.

Bacon-Roasted Chicken with Potatoes

Reviewed: Nov. 2, 2011
I used regular potatoes and cut them similar to home fries. They took nearly 2 hrs to cook. Bacon was still not crispy. Maybe a larger pan? I did not have adobo seasoning but went online and it seems it is mostly more of the same seasonings plus some onion powder and oregano so I made my own. I actually only used 4 legs and left the seasonings the same. This was not bad but I will not likely make it again.

Orange Curried Chicken

Reviewed: Oct. 12, 2011
I loved this as did my guests. I found there was way too much water and I had used only about 1/2. I boiled up the sauce to reduce it a bit and served on the side so it worked out okay. I also increased the curry a bit, added a few grains of sea salt and small shake white pepper.

Bananas Foster II

Reviewed: Oct. 12, 2011
Ah this was fantastic! Very very simple to do as well. I cut down on the butter and cinnamon just a tad. I had some amber rum from the Cayman Islands that I used with it. I also used real whipped cream instead of ice cream. Company loved it. I may try adding the cinnamon to the whipped cream next time...

Sausage Cabbage Bake

Reviewed: Sep. 7, 2011
I made this for a pot luck and it went over very well. I used 1 c raw long grain rice. Browned it a bit after removing sausage from frying pan. I used a 28 oz can of crushed tomatoes and 1/2 c water. Cooked in slow cooker on high for 4 hrs. Still found it a dry so I added 3/4 of a 28 oz can of diced tomatoes. At this point I felt it now needed more spices so I added again the amount for worchesteshire sauce, bronw sugar and a dash of lemon juice.

These had a very interesting flavour. I used sweet and regular potatoes. I found the microwave time for the sweeti potatoes to be way too long.
