Hawaiian Banana Nut Bread

I did make a few changes. I only had one loaf pan so used a bunt pan baking about 70 minutes. I used 2/3 c white sugar and 2/3 c brown sugar. I also added 3/4 c dates and only 2/3 c cherries as that was all i had on hand.

Crazy Mixed Up Cake

I mixed this as a regular cake would be mixed. The chocolate flavour was great but there seemed to be something missing.. nuts? Next time I will ice with chocolate icing.

Cranberry Orange Loaf

Well a bit hard to rate but wanted the info in for myself. I did not have orange juice. I used the zest from an orange and the bit of juice from the orange and for the rest of the liquid I used milk. No pecans as I was out. I put some almond extract in the icing topping. Nice and moist as I made it. My oven is a bit hot so only cooked 40 minutes and it was perfect.

Blueberry Lemon Loaf

I added extra lemon juice to the batter. Next time I think I would add a bit of lemon extract. I kept this loaf in the fridge for well over a week. I did not find it to be soggy at all but stayed nice and moist

Rather like carrot cake with the cream cheese frosting. I would increase the spices next time. Not quite tangy enough for me. I did cut down on the sugar by 1/2 a cup. I also was out of ground cloves and substituted allspice

Deluxe Chocolate Marshmallow Bars

I used a 9x13 pan and they were perfect! Makes a very large batch. Keeps for at least a week in the fridge. I also used special K as that is what I had on hand and chunky peanut butter. They only thing was I had trouble getting the marshmallows to melt. They got crusty on top. Finally gave up and just spread the icing on. You would never know there had been a problem!

Raspberry Almond Coffeecake

I made 1 and 1/2 the recipe and used a quiche pan. I added an extra tablespoon or so of sour cream to improve spreadability. I pushed the batter up the sides to hold the juice in, like a flan. Did not put the berries right to the edge but sprinkled a bit of sugar on the edges of the batter. I mixed about 1 teaspoon of cornstarch into my partially thawed frozen berries. I wanted all the juice for flavour. I sprinkled generously with the almonds and baked. Very nice! Next time I will not double the batter, just the berries.

This was a very moist loaf. I did not bother to strain the berries. Yes you get the crunch from the seeds but I wanted clumps of berries.

Sesame Pasta Chicken Salad

I used this as a main dish and served hot. I cut down the sugar a bit. Half the recipe was plenty for a meal for two with a bit left over for a lunch cold the next day. Love the flavours!
