About this Cook
I am a full-blooded first generation Italian originally from New York. I love to cook and love to try new recipes.
My favorite things to cook
I really do not prefer any style. Most people think I prefer to cook Italian, but I really just prefer to EAT Italian! I love to cook all types of foods, but I am not a big fan of baking. It's too precise, in my eyes.
My favorite family cooking traditions
My mom was a plain cook, but everything she cooked was delicious. She got me interested in cooking when I was a teenager.
My cooking triumphs
I cooked an entire five course sit down dinner for thirty people and everything was delicious. On top of that, once we sat down to eat, I did not have to cook anything at that point - it was all done. Timing is everything!
My cooking tragedies
Oh, there have been some. Recipes that I've tried that were awful. Or, an important dinner that got messed up because I tried to do too much by myself. I like to think I have learned from those experiences and am better today because of them.

Asian-Style Zucchini
Excellent! My wife and I love zucchini and we are always looking for new recipes. Even my son liked this one! I did follow some of the suggestions from others (added fresh garlic instead of powder, cut the sesame seeds in half, and added honey). I did keep the 2 tablespoons of soy sauce as I like that flavor, but I put in one tablespoon early in the frying of the zucchini and another later on. I also used an olive oil cooking spray instead of the butter, to help cut down on the saturated fats. They browned nicely dispite that change. It was great! We will make this again soon. Thanks for sharing!

Chicken Piccata I
This was an excellent Piccata recipe. However, I did slightly modify the sauce. Two tablespoons each of the wine and lemon juice was inadequate, in my opinion. I instead added about a 1/2 a cup of each (slightly more wine than lemon juice) instead of the two tablespoons. I also added a tablespoon of cornstarch so that the juice thickened up a bit. It was outstanding. A great recipe that you will want to try.

Spanish Rice Original
This was easy to make and delicious! I did not add the black olives or the corn, but will try that next time. Thanks!
