Pork Chop Suey

I used this recipe for its sauce -- I used what veggies I had on hand and left over cooked chicken breast. We both enjoyed it very much. (Don't understand why some other reviewers are leaving out the bok choy!) Next time I will make it with fresh minced ginger.

Coconut Curry Tofu

My husband loved this dish. I found it a bit bland and watery. I couldn't taste the curry, coconut or ginger. But I will definitely make it again -- next time I'll press the excess liquid out of the tofu first and add more curry and ginger. I might put not so much chili paste in though. I think it will become a favourite because you could substitute cooked chicken for the tofu if you wanted. Thanks for the recipe!

Blueberry French Toast

This was great -- so easy to put together the night before and pop in the oven in the morning. I added vanilla (as in the Overnite Blueberry French Toast recipe), since I always do with french toast. I wasn't pleased with the sauce, however -- much too sweet and a bit flavourless. I added more blueberries and the zest of a lemon and fresh squeezed lemon juice -- much better! I'll definitely make this again! Note: doesn't reheat well, so be sure so finish it all!

Cranberry Orange Almond Bread

This was absolutely the most beautiful "fruit bread" I've ever had! Mind you, i'm crazy about orange and cranberries. It became my holiday favourite this year -- made 7 or 8 batches of it! Everyone I share it with loved it too. Used chopped pecans in one batch (almonds are my preference, but I ran out) and was still lovely. I'll make this again and again ... Now to invest in a proper zester so I can give my neighbour's back!

Banana Oat Muffins

Great muffins - I like that they're not too sweet. It makes me feel better when all my 2-year-old wants to eat in a day is muffins! I also substituted applesauce for the oil, as I often do in breads and muffins. I got 12 regular sized muffins and still had enough batter for 8 minis. Thanks for sharing, Karen!

Eggplant Tomato Salad

This was very tasty. I didn't use the tomato paste as I didn't have that much liquid from the tomatoes in the first place and I couldn't bear the thought of mixing canned paste with my fresh-from-the-garden veggies! Something I do first with my eggplant always is salt it. Slice it 1/4 inch thick, layer it in a dish, sprinkling each layer with salt. Put a plate over it and weigh it down. Let it sit for at least 1 hour. Then rinse and pat dry and continue with your recipe. This will take out some of the bitterness and make it less spongy. That way when you put it in your oil to saute it doesn't soak it all up in 2 seconds flat.

Mystery Chocolate Cake

Good cake -- very yummy. You'd never know there were beets in it. I don't know if I'd make it if I didn't have a glut of beets from the garden (like now) -- it takes so long to cook the beets -- but I will make this cake again. I decreased the oil by half and replaced it with apple sauce (I do this with all my recipes) and boosted the fibre a bit by using whole wheat flour in place some of the all purpose. (I hadn't done that with cakes before, just breads and muffins, but it worked out fine.) Hopefully that will shave a few grams off the per serving fat content, while still leaving a delicious dessert.
