Quick Cabbage and Noodles

Really good, I used a entire head of cabbage and 1 16oz package of light egg noodles. I may have to add a 2nd can of cream mushroom soup for the 2nd day to re-heat, a good meal and inexpensive.

Pumpkin Soup

I revised it a bit! I used a large can of pumpkin puree, 2 8oz cans of low sodium chicken broth, 1 med acorn squash cooked, 1 med sweet potatoe cooked, 1 lg onion cooked in oil oil. I cut the squash in half removed the seeds, rubbed the skin with olive oil and put on some brown sugar, baked at 375 for 35 min or until soft, peeled and boiled the sweet potatoe. When the sqash was done scooped it out, threw in the potatoes with pumpkin & broth, used a stick blender to puree, leaving some bits, then added my spices, graham marsalla, cumin, salt, red pepper, nutmeg, curry, brown sugar, garlic power all to taste, heated to boiling it was great.

Corn Dog Muffins

Made today, not great I will not make again. Used non stick spray in the muffin pans and they still stuck, what a mess to get out they all fell apart. You could not even taste the cheese, all you tasted was the cornbread. Recipe pictures shows hot dogs cut into pieces, yet the recipe says add 1 hot dog half into each muffin, very strange, so this being incorrect what else of the recipe was wrong. I wasted a lot of time making.

Eggless Tofu Spinach Quiche

I made this minus the crust it was excellent. I saute a large onion & a few cloves of garlic in olive oil, I added all the items to the blender minus the cheese garlic and onions, sprayed a non stick pie plate then put the onions and garlic in the pie pan, put the mixture into a bowl and hand mixed the cheese, I then mixed then added on top of the garlic and onions, baked for 40 min at 350 deg, then 5 min before done added more cheese on the top. I also added nutmeg, cayene pepper, dried red peppers. This was the first time I made it and was good, less calories minus the crust, I will make it again, and add some mushrooms.

Garden Pasta Salad

I use wheat pasta 1# box, adding all fresh veggies, carrots, celery, mushrooms, cherry tomatoes, red onions, zucchini, black & green olives, cukes (optional) 8 oz package of cracker barrel cheese cut into chunks, 1/2 bottle lite cesar dressing 1/2 bottle lite italian dressing and about a half a bottle of McCormicks Salad Supreme (or to taste) this really makes it. This is the best, let me know what you think :-) Adding only 4 stars since mine is different and 2 bottles dressing is way to much.
