Chocolate Chip Banana Muffins

Reviewed: Aug. 14, 2010
YUM YUM YUM! To be honest, I changed a lot in this recipe, but I can't imagine it tasting bad when followed to the letter. Here are my changes: Instead of yogurt, I used sour cream; instead of sugar I used brown sugar; instead of 1/2 cup oil I used only a 1/4 and put in a little more than a whole cup mashed banana; instead of chocolate chips, I got the good, expensive chocolate bars and broke them up into chunks; and I put in a few dashes of cinnamon because I have to have it in everything.

Nacho Cheese Sauce

Reviewed: Mar. 9, 2011
This is a great, basic nacho cheese recipe. I made some substitutions/additions: I used sharp cheddar cheese. I added some taco seasoning, hot chili powder, red and yellow bell peppers, jalapenos, and some ground turkey. Delicious over some Tostitos Hint of Lime chips. :)

Excellent appetizer. I suggest eating this cheese with pita chips or gourmet crackers.

Classic Bran Muffins

Reviewed: Dec. 18, 2011
Excellent recipe. Just added some cinnamon and nutmeg, didn't put in raisins, and cut the oil down to 1/4 cup. This is a perfect base recipe that you can experiment with.

Baked Asparagus with Balsamic Butter Sauce

Reviewed: Mar. 24, 2011
Yum! I'm going to only bake asparagus from now on - it literally melts in your mouth! I sort of left out the soy sauce... and the balsamic vinegar... so yeah. Just butter sauce for us. :)

Roasted Yams

Reviewed: Mar. 12, 2011
Great, easy recipe! For some reason I thought I could get by without flipping the yammies, but I learned when I took them out of the oven and flipped them onto my plate that yes, indeed, in the future I need to flip them halfway through baking. It would be really easy to dress this recipe up, which makes it so great.

Black Beans and Rice

Reviewed: Apr. 27, 2010
I added a few things to the recipe like bell peppers, corn, and jalapenos. Then I served it with Salsa. Excellent recipe for classic beans and rice.

Peanut Butter Kiss Cookies

Reviewed: Dec. 20, 2009
Pretty good! Make sure you bake the cookie part long enough so that the cookies stay together. I only used 1/2 the sugar and it wasn't too sweet at all.

Good Old Fashioned Pancakes

I also added about 1/4 cup sour cream - it made them super soft and fluffy. Highly recommend this recipe, it's very very good.

Coconut Tofu Keema

Reviewed: Aug. 2, 2010
This is a great recipe. I have made a few modifications to taste: lessened the amount of tomato sauce, added broccoli and sugar snap peas, and instead of red pepper paste I used red pepper powder. I cut the recipe in half and it was still enough for 2 large dinner portions, then 2 large portions left over.

Feta Cheese Ball

Reviewed: Dec. 17, 2009
Very good! I put less dill and olive oil than the recipe called for. I put more feta than the recipe called for as well. I think the onions made it a little bitter tasting, so I think I'll leave those out next time.

Best Big, Fat, Chewy Chocolate Chip Cookie

Reviewed: Oct. 22, 2011
I can understand why the other reviewers rated this cookie recipe so high. But for me personally, there was waaaay too much sugar and butter. Okay, maybe just too much sugar. :)

Kickin' Collard Greens

Reviewed: Mar. 12, 2011
Great, easy recipe! We left out the bacon and used Chalula instead of red pepper flakes and it turned out great. If you have the option of low sodium chicken/vegetable broth, I highly recommend that - otherwise these greens are suuuuper salty.

Broccoli Salad

Excellent Broccoli Salad - reminds me of childhood in the Midwest. Variation: Nix the bacon, use grape tomatoes instead. Instead of mayonnaise, I used lowfat sour cream. Excellent!

Baked Omelet Squares

Reviewed: Dec. 27, 2009
I changed the recipe so much, I'm not sure if it's fair enough to rate this one. I added a lot of other ingredients (lots of veggies, cheese, bacon, hot sauce etc.), and it turned out pretty well. I don't think I would have enjoyed it as well with the original ingredients, but really, you can make an omelet however you'd like. In either recipe, the end result is very rich, and will fill you up for the next several hours, so I'd make this for a lot of people, not just a few.

Slow-Cooker Pepper Steak

Reviewed: Dec. 27, 2009
Pretty good! I have to admit, I was expecting a different taste from it, but the one that came out wasn't all that bad. I might forgo the tomatoes next time and think up something else to put in it. I used Soyaki sauce instead of Soy sauce, and I think it made it tangier.

No Bake Peanut Butter Pie

Reviewed: Dec. 27, 2009
Um... wow. Just a warning - this turns out a little bit more like ice cream pie, but let me tell you it's delicious, and I've never had anything quite like it. Mine maybe turned out more like ice cream because I put in a lot of whipped cream in the batter, and then put it in the freezer. But now I wouldn't dream of eating it any other way than with extra whipped cream to harden it enough for an ice cream consistency. Highly recommend for peanut butter AND ice cream lovers.

Cream Cheese Cookie Cups

Really easy to make. They are a little sweet for my taste, so I add extra cream cheese. I brought these into the office and 3 people wanted the recipe - instant favorite.
