Simple Scones

These scones are perfect!! Suggestions: 1. Don't skip the step of freezing (or even grating, for that matter), the butter. The texture is just perfec. 2. Use fresh fruits - I made these with raspberries. Note that if using raspberries or even blueberries, the berry will break apart. In order to make your batter not look hot pink, after rinsing the raspberries, toss them in a little bit of flower. Even when I mixed and mashed these in the bowl as the recipe has you do with the dough, the scones came out of the oven with that perfect golden brown color. 3. Bake the scones on a pizza sheet (circular baking pan) covered in foil and lightly sprayed with Pam. This way, the bottoms come out the same color as the rest of the scone.

Garlic Cheese Ball

Very good cheese ball, especially if you like ranch. One variation I tried was only putting in 1/4 cup butter, and it was still good.

Pumpkin Roll II

This is a great addition/substitution for a pumpkin pie. I still experienced some cracking in the pumpkin cake, and I could taste a bit of the baking soda. I anticipate that the way you would avoid breakage is by making the cake as thin as possible. And to avoid the hint of baking soda, either only putting 3/4 teaspoon soda and/or sprinkling the log completely with confectioner's sugar.

Brown Family's Favorite Pumpkin Pie

It alarmed me that there was no sugar in this pie (it just alarms me in general if there's no sugar in food I'm about to eat), but it turns out the sweetened condensed milk took care of it. This pie didn't taste like a store bought one, but one that was truly home-made. Definitely steal-able from a window sill.

Bread Pudding II

The best bread pudding I've made yet! I added dried blueberries instead of raisins. I don't see why you couldn't use fresh fruit - I think it would taste even better.

Feta Cheese Ball

Very good! I put less dill and olive oil than the recipe called for. I put more feta than the recipe called for as well. I think the onions made it a little bitter tasting, so I think I'll leave those out next time.

Marie's Easy Slow Cooker Pot Roast

It's okay, but needed more spices. I am definitely going to add Worcestershire (the one sauce barely anyone can pronounce without talking in slow motion), and even some hot sauce next time. I think adding salt and pepper to the slow-cooker would have helped as well. It came out a little bland.

Slow Cooker Pulled Pork

Perfect and plain recipe. Add some more sauces/spices to the slow-cooker for more flavor. Also, I suggest putting the pulled pork on Hawaiian sweet rolls instead of hamburger buns. DELISH!

Peanut Butter Kiss Cookies

Pretty good! Make sure you bake the cookie part long enough so that the cookies stay together. I only used 1/2 the sugar and it wasn't too sweet at all.

No Bake Peanut Butter Pie

Um... wow. Just a warning - this turns out a little bit more like ice cream pie, but let me tell you it's delicious, and I've never had anything quite like it. Mine maybe turned out more like ice cream because I put in a lot of whipped cream in the batter, and then put it in the freezer. But now I wouldn't dream of eating it any other way than with extra whipped cream to harden it enough for an ice cream consistency. Highly recommend for peanut butter AND ice cream lovers.

Slow-Cooker Pepper Steak

Pretty good! I have to admit, I was expecting a different taste from it, but the one that came out wasn't all that bad. I might forgo the tomatoes next time and think up something else to put in it. I used Soyaki sauce instead of Soy sauce, and I think it made it tangier.

Baked Omelet Squares

I changed the recipe so much, I'm not sure if it's fair enough to rate this one. I added a lot of other ingredients (lots of veggies, cheese, bacon, hot sauce etc.), and it turned out pretty well. I don't think I would have enjoyed it as well with the original ingredients, but really, you can make an omelet however you'd like. In either recipe, the end result is very rich, and will fill you up for the next several hours, so I'd make this for a lot of people, not just a few.

Black Beans and Rice

Broccoli Salad

Excellent Broccoli Salad - reminds me of childhood in the Midwest. Variation: Nix the bacon, use grape tomatoes instead. Instead of mayonnaise, I used lowfat sour cream. Excellent!

This is a great recipe. I have made a few modifications to taste: lessened the amount of tomato sauce, added broccoli and sugar snap peas, and instead of red pepper paste I used red pepper powder. I cut the recipe in half and it was still enough for 2 large dinner portions, then 2 large portions left over.

Chocolate Chip Banana Muffins

YUM YUM YUM! To be honest, I changed a lot in this recipe, but I can't imagine it tasting bad when followed to the letter. Here are my changes: Instead of yogurt, I used sour cream; instead of sugar I used brown sugar; instead of 1/2 cup oil I used only a 1/4 and put in a little more than a whole cup mashed banana; instead of chocolate chips, I got the good, expensive chocolate bars and broke them up into chunks; and I put in a few dashes of cinnamon because I have to have it in everything.
