These scones are perfect!! Suggestions: 1. Don't skip the step of freezing (or even grating, for that matter), the butter. The texture is just perfec. 2. Use fresh fruits - I made these with raspberries. Note that if using raspberries or even blueberries, the berry will break apart. In order to make your batter not look hot pink, after rinsing the raspberries, toss them in a little bit of flower. Even when I mixed and mashed these in the bowl as the recipe has you do with the dough, the scones came out of the oven with that perfect golden brown color. 3. Bake the scones on a pizza sheet (circular baking pan) covered in foil and lightly sprayed with Pam. This way, the bottoms come out the same color as the rest of the scone.
