Sunset Chicken

I substituted the whole chicken for 4 chicken breasts. I also have a tip for making the sauce: mix your corn starch in with the room temperature peach juice before adding it to the hot pan! I am not familiar with corn starch so much and didn't know that it clumps when mixed with hot liquids. So- I had to make the sauce twice! It turned out very good, it was pretty sweet. I served it over rice to balance out the sweetness.

Pasta with Scallops, Zucchini, and Tomatoes

This was a really good dish. I substituted the Scallops for chicken because we are not big on scallops. It turned out really nice and I even enjoyed the leftovers for lunch the next day! mmmm good!

Truck-Stop Buttermilk Pancakes

We have searched for and made a LOT of pancakes claiming to be like Diner or Truck Stop pancakes, these are THE BEST! The only thing we changed was reducing the sugar (the syrup is sweet enough) and added a little vanilla then we use Crisco shortening on the griddle, that makes the color perfect and the flipping very easy!
