Pineapple Pound Cake Upside Up

Baked Omelet Squares

Great! Made this for dinner. My son wanted scrambled eggs and then I saw this so made it. I used green peppers instead of the jalapeno peppers and some chopped honey ham I had in the freezer; I sauteed both of these with the onions. Then I followed the recipe until the eggs were added. Once they were in the dish, I gently sprinkled about 1/4 grated Colby Jack cheese & some chopped Roma tomatoes on top. He loved it! Thanks so much for posting the recipe. (Oh! I halved the recipe as it was only two of us, for the whole thing, use 1/2 cup cheese on top.)

Fried Rice

A good recipe but I did increase amounts of ingredients and add ingredients to make the dish savory. I increased some things as well as adding some. I increased to one cup minced onion, one tablespoon minced garlic, one tablespoon dried parsley, 5 tablespoons teriyaki sauce, 1 teaspoon black pepper, and two eggs. Instead of 1/4 cup butter, I used two tablespoons vegetable oil and two tablespoons butter. I added 1/2 cup chopped green peppers & 1/2 chopped spiral ham. I cooked the onions, garlic, celery, green peppers in the oil & butter until they were tender; added ham & cooked thru; then I added the rice & fried it - over medium high heat, not medium low - until it was almost done, about 1-2 minutes. Finally, I pushed the rice to the side & added the two beaten eggs to the center of the pan; I scrambled them partially there in the center & finally finished scrambling them in with the rice. Scrambling them partially before you mix them with the rice prevents the rice from becoming mushy from the moisture in the eggs. Really good! This one is saved in my files for quick pull-up & spur of the moment use. :)

Orange Balls II

These are delicious. Thank you for sharing your recipe. When I made my second batch, I used my grandmother's cooking secret -- I added a shot of brandy to the mixture. The brandy enhances the flavor - myself, my family, and my friends loved them.
