Vegetarian Gravy

I had tried to make vegetarian gravy twice before this - once from scratch (a lot of effort for an ok gravy) and then another time from a packet (it never thickened). I decided that this recipe would be my final attempt at veggie gravy, before giving up. Wow! This is absolutely fantastic! Sooooo quick and easy to make! We had it with Quorn mince and it was just perfect. My boyfriend is not vegetarian and he really enjoyed it too. I left out the nutritional yeast (not really sure if this is any different to 'normal' yeast?) and the sage, as I didn't have any. I'd agree that it needs more of the broth, but other than that, this is absolutely spot-on. I'm so glad I gave veggie gravy a final try with this recipe!

Stuffed Peppers My Way

Delicious, delicious, delicious! My first attempt at stuffed peppers (trying to use up extra red peppers I had, so I used them instead of green), and after about 2 mouthfuls I had decided that this is one of my favourite dishes ever! I would say that the peppers only need about 15 minutes to roast initially - after 20 minutes mine had lost their shape and were difficult to stuff, as some other reviewers have mentioned. When I made them a second time, only roasting for 15 minutes, they came out much better. I also used normal onion, as I hadn't realised that "green onion" was another name for "spring onion"!!! It worked just fine. I also made some to take into work for lunch the next day (yes, they were that good!) and I reheated them in the microwave and they came out just fine. I had my stuffed pepper with some mashed potato which I thought made it into a really good, filling, tasty meal. Oh - and I used fresh basil - definitely use this if you have it, but I add it a bit later than suggested in the recipe, so the fresh taste is not lost by cooking it too long.

Ham, Basil, and Feta Scrambled Eggs

I left out the ham, as I'm vegetarian, and also used fresh basil, as it was what I had available. I thought this was really delicious, even without one of the main ingredients! The fresh basil was great, and I would now only try it with dried basil if I didn't have any fresh available. Really quick, easy and tasty!

Asparagus Cashew Rice Pilaf

Fantastic recipe - everyone I cooked it for loved it! I just used ordinary long-grain rice, as couldn't find jasmine rice, but it was still delicious. Apart from that, I made it exactly as directed and it was great. A firm favourite. I should also point out that I made it as a main course, not a side dish or starter, and you should bear in mind that, if you want to do this, it will NOT give you 8 portions - 3 or 4 is more realistic, depending on how hungry you are!

Mushroom Risotto

Fantastic! Really delicious - even my sister, who hates mushrooms AND risotto, really loves this when I make it. I put in more mushrooms than the recipe calls for, as I love them, and substitute fresh, chopped chives for the parsely. I also find that it doesn't need half as much stock as the recipe suggests, but perhaps I am doing something wrong. This has become one of my my favourite recipes - to cook and to eat!
