Quick Chicken Piccata

This is by far the best chicken piccata I've made. I use chicken broth instead of water, and always dredge the breasts in flour, dip in egg and the coat with bread crumbs. It's a lot of work, but worth the effort. Panko bread crumbs work best.

Barbie's Tuna Salad

AWESOME! My husband doesn't like pickle relish in my tuna salad, so I chopped up celery instead. Everything else was exactly as listed. It was sooooooo goood!! No more tuna & mayo salad for me!

Garlic Chicken

One of the best chicken recipes ever!! I coated my chicken breasts in olive oil, then put the other ingredients in a big ziploc and coated them and baked. LOVE it!

Greek Chicken

DELICIOUS!! I spatchcocked a roasting chicken and marinated almost 24 hours. Then I actually roasted the chicken in the oven instead of on the grill and poured the marinade over the top and in the roasting pan while it cooked. So the chicken was able to continue to soak up some of these fabulous flavors. HIGHLY RECOMMEND this simple and yummy recipe!

Swedish Meatballs (Svenska Kottbullar)

Very good tasting meatballs. I followed the recipe exactly. I served this with egg noodles and thought the sauce/gravy was a little bland, but the meatballs were great.

Simply Elegant Steak and Rice

This is good, but by no means "elegant." It's strips of round steak in a brown sauce over rice. I used fresh garlic and mushrooms. I also didn't have any sherry I googled to see what could use to replace it. I used mostly dry vermouth, with about a tablespoon of balsamic vinegar. It could have used more of the balsamic or something to give it more of a kick or tartness. Definitely a great starter recipe, but anyone whose cooked for awhile will have their preferences on what to add or how to modify.

Round Steak Sauerbraten

Another great alternative to making swiss steak (which is what I usually do with round steak). Totally different flavor then the typical steak with beef flavored gravy. Very good.

Texas Hash

This is really good. I'm giving it five stars based on some simple, basic changes. I read other reviews about it being bland, so I sauteed some minced garlic. I added a can of chili beans (others suggested black beans, but I didn't have any), & a few dashes of worchestershire. I substituted jasmine rice for instant and used yellow and orange peppers instead of green. The rest of the ingredients were the same, except I only added 1 T chili powder because I included the liquid with the chili beans. I think I made too much rice because I needed a 15 ounce can of tomato sauce when others thought it was soupy - mine was too dry. I will make this again!!! Kids even liked it.

Chicken Cordon Bleu II

Very good. I used left over spiral sliced ham from Easter, and the ham was way too thick in my opinion. The flavors were great, but don't use too much ham it overpower the chicken and sauce.
