Brunch Enchiladas

Updated 2/17/2015: My version of this recipe is a real hit with family and friends. I replace the ham with 1/2 pound each of cooked sage or country style sausage and chorizo sausage. Instead of green bell's, I use red bell for the sweetness and add 1/2 cup of chopped roasted mild green chilies. For my taste, I would add jalapeno's, but since most of my friends and family have a tame palate, I leave the hot stuff on the side. I also replaced the cheddar with a Mexican cheese blend. You could also use oaxaca or asadero cheese in this recipe. I add an extra egg (6 eggs total). For seasoning, I add 1/2 tsp of kosher salt, freshly ground black pepper (to taste), and a "special" ingredient...1/2 tsp smoked paprika. The paprika goes very well with the chorizo and adds a bit more smoke flavor. Also, if you really want to turn up the flavor, make your own tortillas! Thanks for this recipe DBLUNCK!

Bodacious Broccoli Salad

This is a great recipe that I've used many times. I've modified Cassandra's recipe to make it my own, but the original is great just the way it is. Family and friends request it often, so I know it's a realy hit!

Molasses Sugar Cookies

I'm a country boy from Kentucky and grew up with homemade molasses cookies. All I can say about this receipt is OMG!! I used butter for the shortening and pure Kentucky sorghum molasses (made at Oberholtzer's Sorghum Mill in Liberty, KY). The cookies have a wonderful buttery, rich, spiced flavor, slight crunch on the outside and moist, chewyness on the inside. When I bit into the first one, I quite frankly had a flashback to my childhood. This recipe is going to be a part of my annual Christmas collection from now on!! Thank you Karin for this fantastic recipe!!

Blueberry Streusel Muffins

The muffins are very tasty. I used half blueberry's and half strawberries. I also replaced about 1/4 cup of white sugar with brown sugar. I believe the richness of the brown sugar enhances the taste of the berries.
