Chewy Chocolate Chip Oatmeal Cookies

Awesome recipe! I added 1/4c more flour, and 1/2tsp more baking soda and used both peanut butter and chocolate chips. Perfect! Thanks for a great recipe!

Rachel's Tomato Basil Soup

This soup was delicious! I substituted a 14.5 ounce can of diced tomatoes for the tomato juice and added one large clove of garlic and then pureed it. I then cooled and refrigerated it overnight and took it camping and added in the cream and butter after it was simmering over the camp stove. I served it with a little bit of shredded cheese and everyone devoured it! It was a chilly night at camp and this really hit the spot. My boyfriend is begging me to make it again!

Simply Parmesan Chicken

This was a really great recipe. I did make a few changes. I added some garlic and onion powder to the breadcrumb mixture and after coating the breasts I seared each side in a pan with olive oil for about 2 minutes per side before baking. This helped keep the crust crispy. I served with melted asiago cheese and marinara sauce on top. Added a side of fresh green beans and angel hair pasta and it was delicious! Definitely will make this again.

Pineapple Angel Food Cake I

Great, simple recipe! I paired it with the whipped cream recipe from this site and it was delicious! I used 2- 9" loaf pans and one of my cakes fell a bit but they both still tasted great. Next time I will try it with a bunt pan for a prettier look.

Rich and Creamy Tomato Basil Soup

This soup was really tasty but I did change it up just a bit. I used 2-28oz cans of organic crushed tomatoes and one 14oz can of diced tomatoes which eliminated the need to blend the soup. I also added 2 cloves of garlic and one shallot. Mine made a larger pot of soup so I added about 1/4 cup more of cream. Definitely will try this recipe again in the summer with fresh tomatoes and I'm sure it will be even more delicious!

Easy Mexican Casserole

This recipe was great with some alterations. I added a box of spanish rice, used corn tortillas instead of chips, black beans instead of chili beans, and added a can of green chilis and some taco seasoning to the meat while it was cooking. I did not layer in the sour cream but instead let each person add it as they choose so that it would be better re-heated. I think this recipe could have been fairly bland as is, but with my changes I really enjoyed it and so did my boyfriend.
