I've made this recipe several times with bacon instead of pancetta. As mentioned already, it is simple, quick, and yummy - one of those recipes where you're bound to have the ingredients already in your home.

High Temperature Eye-of-Round Roast

I had a 6 pound roast. This recipe was good, but not great. I love searing our meats on the the outside, and though there was a nice crust on top, it did not sear on the sides. It was also more done than we'd like (per recipe, this cooks to medium - slightly pink in the center.) I love the idea of letting the roast sit in the oven to cook, however, so will tweak the timing and perhaps bump up to 500 from 475.

Grilled Salmon

Argh! Forgot to lessen the seasonings as I was using dried instead of fresh. Thus, the salmon was overrun with parsley and rosemary. I also prefer olive oil over the veggie oil. This marinade needs more zest ... would try garlic with it next time.

Baked Macaroni and Cheese with Ham

An easy and tasty dinner - sure to be a favorite in your house too. The mustard gives the cheese sauce the right kick, but doesn't turn away the kids from loving it too! I use a VA baked ham, or sometimes a honey-flavored ham, but anything with brown sugar makes this too sweet. Emjoy!

Easy Pumpkin Muffins

These are tasty considering how easy they are to make - how refreshing that I didn't have to crack open an egg, or measure out the oil, as seems standard for many cake/muffin recipes .... I did use a spice cake mix instead, as I'm not a fan of yellow cakes. The recipe leaves room for personal improvements on a basic, but good flavored muffin.

Sweet Potato Casserole VI

Absolutely delicious ... I did cut the white sugar in half (still plenty of sweetner), with the rest of the recipe "as is". It paired well with the turkey and the other side dishes to help create a fantastic meal. Thanks!
