Never Enough Green Bean Casserole

Reviewed: Nov. 27, 2010
I didn't have an oven, so I made this recipe on the stove-top, letting it heat & thicken for about 30 minutes. It turned out great. I added the fried onions just before serving. A few modifications: I left out the bacon bits but added half an onion and fresh mushrooms. I also used fresh green beans, and the fresh taste was delicious.

Chocolate Crinkles II

Reviewed: Dec. 20, 2010
You definitely have to plop the "dough" (basically a brownie mixture) into the powdered sugar and roll it around to fully coat it. This makes the balls easy to handle and creates the "crinkles." Otherwise it will be sticky and very had to handle. Also followed other raters' advice to put the dough into the freezer about 45 minutes prior to baking. Very helpful. These we delicious! I might add a bit more sugar to the dough next time. Tried adding dark chocolate chips and that was great, too!

Mexican Wedding Cakes II

Reviewed: Dec. 20, 2010
These are my favorite every year! I use pecans and chop them finely. These cookies are a nut lover's paradise. And I love that they're not TOO sweet. Just enough! Mmmmm...

Added celery, tomatoes, and a little cream. Added maybe a third more vegetables and broth. Also cooked a little more than the recipe said.

Persimmon Cookies I

Reviewed: Dec. 8, 2012
Used Fuyu persimmons instead of Hachiya, so maybe they weren't quite as sweet or flavorful as they could have been, but these still had a nice, Christmasy taste. Mine were on the cakey side, too.

Kitchen Sink Cookies

Reviewed: Dec. 8, 2012
This is just an "add-what-you-want" cookie recipe, but it turned out really well! I used oats, chocolate pieces, chopped Snickers, chopped Reese's peanut butter cups, and pecans. I don't think they needed a little extra water like some suggested. I added it and they were a little flat. Next time I won't add extra water. Overall, YUMMY.

Candy Cane Cookies II

Reviewed: Dec. 23, 2012
Took much longer than I though (it was tedious to twist the dough), but they turned out beautifully! Sprinkled crushed/powdered candy canes on top right out of the oven and it stayed there. Added a little more flower as some suggested, and not quite as much almond extract. Can't wait to serve them tonight.

A little heavy on the topping, but still very yummy! Added blended oats and walnuts.

Red Cabbage and Apples

Reviewed: Jan. 15, 2013
I loved it. I think it needed a little more apple, so next time I'll add more. Also, for the indicated serving size, this made a LOT. As a side dish, I think the serving size listed is too small.

Red Lentil Curry

Reviewed: Jul. 1, 2013
I absolutely LOVE this curry. It helps that I use a stellar, potent real Indian curry paste, but this recipe is amazing. I always add lots of veggies -- carrots, potatoes, peppers, and/or beans -- and not so many spices (my pastes is loaded). If it needs thickening I'll add a spoonful or two of cream cheese. YUMMMM.

Yummmmm. Could use a tad more sugar if you want them naturally sweeter, but overall these were great.

The Best Lemon Bars

Reviewed: Jul. 14, 2013
I thought these tasted great but were too thin. I think for the size of the pan at least the lemon topping should be doubled. Only used half the amount of sugar in the lemon custard and added salt to the crust, as many suggested. Very yummy overall.

Jewish Eggplant Lasagna

Reviewed: Jul. 14, 2013
My only complaint was that this dish is so dense. It might need some more light "filler" ingredients (potatoes or pasta maybe?). I still really enjoyed it though.

Loved it. Used real onions and garlic and it was even better. Just threw them in a food processor with a cup of the liquid. Great for grilling.

Quinoa Side Dish

Reviewed: Oct. 11, 2013
Added extra spices and some lime juice, too. It was great on it's own as a side, but this goes especially well with a "saucy" meal... something that can been soaked up in the quinoa to add flavor.

Spicy Garlic Lime Chicken

Reviewed: Oct. 18, 2013
Really like this. Modifications for next time: less salt and less butter in the pan. With pasta, added some chicken broth so there would be more of a sauce with it. Next time, I want to make this with a mango chutney topping/side.
