Apple Crisp Cups

Loved this! Here are the changes I made based on personal preference: I don't like really sweet desserts so I added a little less sugar. I also followed other reviewers advice and reduced the amount of crust, using only 1.5 cups of flower & oats, etc., and 1/2 the amount of butter. I found I didn't have quite enough crust so I'll adjust next time. I loved the suggestion about cutting the butter in pieces, freezing it, and then "cutting it" in a blender (before oats). Worked like a charm and saved lots of time and arm work. For posters who said their apples were too mushy when they cooked them beforehand, keep in mind this all depends on the type of apple you use. I used firm apples meant for baking.

Chicken Wild Rice Soup I

Great, classic recipe. I didn't love the curry... might omit it next time. My changes: added at least 50% more veggies (personal preference), and will make some changes to reduce the fat. I found it a little too rich to feel good about eating it! :) So, next time: less butter and 1c. milk substitution for half & half. Still deserves 5 stars. I especially love the almonds.

Vegetarian Lime Orzo

Good, but could use a little more flavor. Also, learn from my mistake and be careful not to overcook the veggies. I'd suggest cooking the orzo in the broth with tomatoes for a while *before* adding the carrots and zucchini. They're shredded, so they'll cook in minutes, anyway. The last few ingredients (onions, parsley, etc.) should be added just before serving. Overall, my dish was a little mushy so none of the vegetable flavors or textures came out. Still enjoyed it, and adding some crushed red pepper helped balance the lime.

Homemade Black Bean Veggie Burgers

These turned out great! My husband is not a vegetarian, but loved them. I doubled the recipe so I could freeze more leftovers. I followed other reviewers' advice for keeping the patties in tact and patted the beans dry, added 50% more bread crumbs, and added an egg (50% more for a double batch). The patties stuck together perfectly. I also added corn -- yum. I used plain bread crumbs, but flavored or salted might be better. Also, next time I'll add a little more chili sauce or chili oil because I'd personally prefer a little more of a kick. Regardless, these were terrific.

Make-Ahead Vegetarian Moroccan Stew

Added more veggies, fewer potatoes, and almost doubled the spices because I enjoy strong Moroccan flavors. I also love tomatoes so added another can of those (also to even out the extra veggies). My family loved it so much they asked for the recipe to make it for a big holiday dinner. Don't leave out the apricots. They add a unique flavor.

Spicy Garlic Lime Chicken

Really like this. Modifications for next time: less salt and less butter in the pan. With pasta, added some chicken broth so there would be more of a sauce with it. Next time, I want to make this with a mango chutney topping/side.

Quinoa Side Dish

Added extra spices and some lime juice, too. It was great on it's own as a side, but this goes especially well with a "saucy" meal... something that can been soaked up in the quinoa to add flavor.

Teriyaki Marinade

Jewish Eggplant Lasagna

The Best Lemon Bars

I thought these tasted great but were too thin. I think for the size of the pan at least the lemon topping should be doubled. Only used half the amount of sugar in the lemon custard and added salt to the crust, as many suggested. Very yummy overall.

Buttermilk Pancakes II

Yummmmm. Could use a tad more sugar if you want them naturally sweeter, but overall these were great. Next time I'll add less melted butter and make sure the griddle is on a higher heat. Tip to self for crispy edges: more baking soda, high heat, cook in veg. oil (or fat).

Red Lentil Curry

I absolutely LOVE this curry. It helps that I use a stellar, potent real Indian curry paste, but this recipe is amazing. I always add lots of veggies -- carrots, potatoes, peppers, and/or beans -- and not so many spices (my pastes is loaded). If it needs thickening I'll add a spoonful or two of cream cheese. YUMMMM.

Red Cabbage and Apples

I loved it. I think it needed a little more apple, so next time I'll add more. Also, for the indicated serving size, this made a LOT. As a side dish, I think the serving size listed is too small.

Candy Cane Cookies II

Took much longer than I though (it was tedious to twist the dough), but they turned out beautifully! Sprinkled crushed/powdered candy canes on top right out of the oven and it stayed there. Added a little more flower as some suggested, and not quite as much almond extract. Can't wait to serve them tonight.

Kitchen Sink Cookies

This is just an "add-what-you-want" cookie recipe, but it turned out really well! I used oats, chocolate pieces, chopped Snickers, chopped Reese's peanut butter cups, and pecans. I don't think they needed a little extra water like some suggested. I added it and they were a little flat. Next time I won't add extra water. Overall, YUMMY.
