Marranitos (Mexican Pig-Shaped Cookies)

So, i didnt happen to have a pig shaped cookie cutter lying around, so i used the basis of this recipe for drop cookies! Well, i only used 3.75 cups of flour rather than 6, and 3/4 cup of molasses with 1/4 cup of light corn syrup. I added a dash of ginger, and they were delicious! Now they are a family must-have!

Lemon Blueberry Drop Scones

excellent, moist delicious scones! i have made these before and got great reviews. for my second time around, i added a cinnamon sugar mixture to the glaze in addition to the confectioners sugar and it came out excellent! :) this recipe is definitely a keeper and i'll be using it plenty more in the future.

Baking Powder Biscuits II

easy recipe that doesn't call for cream of tartar or buttermilk. the recipe is also very versatile. i added dried shallots, garlic bread seasoning, parmesan, and used olive oil in place of vegetable oil. the biscuits had great flavor.

Jumbo Raisin Spice Cookies

The cookies had just the right amount of spice. I used 1 1/2 c. oatmeal instead of peanuts and only added 1 and 1/2 cups of raisins. I then added 1/2 c. chopped almonds and 1/2 c of chocolate chips. They had just the right texture and flavor :)

Hello Dolly Cookies

These bars will fill any sweet tooth. I made some changes that added to the flavor :) I didnt have enough graham cracker crumbs and so i ended up using some stale apple cinnamon cookies crushed up because they had the same consistency as the graham cracker crumbs. I pressed the crumb crust into the pan before baking rather than mixing all of the ingredients together initially. To the top of the graham/butter mixture, i added a cinnamon sugar mix and it was amazing combined with the coconut.

Polenta and Vegetable Casserole

I made this recipe for a party in which we had some guests who were vegetarian attending and it was a hit. I didnt have any eggplant but i substituted with more mushrooms and a whole can of olives. I also did not want to add salsa but i used prego instead and this gave the dish just the right tomato flavor without being too over powering. The dish was runny but everyone was still willing to dive right in. Everyone who ate it said it was fabulous!
